Pumpkin Chocolate Chip Cookies III

Reviewed: Feb. 11, 2006
I made these at Christmas and they were a huge hit. My favorite part is they stay moist and chewy, much longer than my traditional toll house cookies, which make them perfect for gift giving too! My son's daycare teacher said this recipe was better than the ones her mother has made for years! Delicious!

This was easy and DELICIOUS!!! There were NO leftovers (much to my dismay). This is a keeper and I have already shared it with friends. And it smells so good when it is cooking.

Lemon Pepper Shrimp with Mustard

Reviewed: Apr. 19, 2003
So easy yet delicious!!! I have made this a few times for myself since my husband does not eat a lot of seafood. Last night I made too much and my husband finished it off. When I asked him why he didn't just have it for dinner, he responded by saying, "well, I didn't realize this was going to be restaurant quality!" What a compliment from him. I really recommend this recipe, so simple, so quick but OH SO GOOD! Thanks for sharing the recipe.

Scallops and Spinach over Pasta

Reviewed: Oct. 19, 2002
This is a nice recipe that gives you a full meal in one. But I agree with the other reviewer that it is a little bland and needs some more garlic, salt and pepper. Other than that I will make it again. I had to use canned spinach because that is what I had, so I drained it and it was fine.

Dinah's Baked Scallops

Reviewed: Oct. 17, 2002
These were very good. I made a single serving and decided to cut the butter in half and use a little less wine. Very tasty. I made bow tie pasta as a side and mixed it with the extra "gravy" that was left in the pan after removing the scallops. It gave them a nice flavor. I also decided to broil them for about a minute to make them a little darker. Very easy recipe.

Light and Spicy Fish

Reviewed: Oct. 16, 2002
I must admit that when I read over the ingredients I was nervous about how it would come out. I used flounder because that is what I had on-hand and I have to admit is was great. So simple to prepare and cooks so quickly. Not to mention it was very tender. I can't wait to make this again. Thanks for the recipe!

Apple Bundt Cake

Reviewed: Oct. 8, 2002
I can't say enough good things about this cake. I took other's suggestions and used 1 cup of white sugar and 1/2 cup of brown sugar. I used 3 cups of Gala apples which are very tasty. I made it for my family as dessert and brought the leftovers the next day to work. Everyone loved it and they were very impressed at how the apples stayed mixed in the batter. Some people told stories of apples sinking to the bottom, but not with this recipe. This was great warm out of the oven with Vanilla Bean ice cream and cooled the next morning for breakfast. This is a great recipe either as a dessert or as an addition to a bruch buffet. I can't wait to make this one again! Thanks for the terrific recipe:)

Michelle's Peanut Butter Marbled Brownies

Reviewed: Oct. 6, 2002
These are awesome. They are a nice change to my cream cheese brownies and the peanut butter is a great combination with the chocolate. I was pressed for time so I used a boxed brownie mix but they still came out great. I can't wait to share this recipe with the girls at work. Next time I will try using Michelle's brownie recipe. Thanks, this one is a definite keeper!

Broiled Scallops

Reviewed: Aug. 30, 2002
I can't believe this recipe! Wonderful and super easy!! I used sea scallops which seemed to fit the cooking time better. But keep an eye on them since they cook quickly. I shared this recipe at work and other people have tried it and raved about it too. This is so simple yet delicious. I just went out to buy more scallops so I can make this again. Thanks for the recipe, this is a definite keeper!

Simply Swordfish

Reviewed: Jul. 9, 2002
This was pretty good. I let it marinate overnight which gave it a nice taste except the lemon flavor was very strong. I probably should not have let it sit in so much lemon juice. The lemon pepper and dill gave it a restaurant flavor, though. Thanks.

Chocolate Chip Meringue Drops

Reviewed: Jun. 18, 2002
Easy and delicious. I used 1 cup of chocolate bits, because 1/2 cup did not seem to be enough. I also only left them in the oven for about 45 minutes after baking instead of 2 hours and they were fine.

This was very good, but next time will cut the recipe in half because it makes too much marinade. Thanks for a nice alternative to teriyaki.

Delicious and very easy! What a nice way to enhance an already tasty fish. I cooked mine by placing on a piece of aluminum foil on the grill and it was excellent. I shared this recipe with my coworkers and they loved it too.

Grandma's Homemade Banana Bread

Reviewed: Jun. 4, 2002
I have been experimenting with different banana bread recipes on this site. This so far is my favorite. I made this using 5 small bananas and the flavor was excellent. My nieces and nephews devoured this in no time at all. I did add 1 teaspoon of cinnamon and 1/2 teaspoon of nutmeg. I will share this recipe with my friends. Give this one a try - you will like it!

Banana Bread I

Reviewed: May 11, 2002
This is a new banana bread recipe that I tried for a change and it is great. Everyone I have made it for loves it. I adjusted the recipe by adding 1 teaspoon of cinnamon, 1/2 teaspoon ginger, 1/2 teaspoon nutmeg and 2 tablespoons of milk to the recipe. It was the moistest banana bread I have ever tried. Thanks for the recipe Nikki!

Deep Dark Chocolate Cake

Reviewed: Apr. 6, 2002
This was super easy to make and it turned out great. I made two 9x13 cakes and layered them for a birthday cake to feed a larger group. I used a different frosting recipe, Whipped Cream Frosting by Tom Parker (which combines whipped cream and cream cheese) and it was excellent. The cake is even better the next day!
