Aunt Mary's Eggplant Balls

ABSOLUTELY DELICIOUS !!! I made this along with "Sweetened Spaghetti Squash" and served it with a small amount of tomato sauce....my family (who normally do not like eggplant or squash) LOVED it !!!

Classic Spanish Sangria

instead of 1.5 cups of rum i only used 1/2 cup of brandy per batch. i also did half a lemon and half a lime instead of a full one. i let the orange, lemon and lime "cook" in the brandy/sugar mixture for a day then added a diced up apple and let that "cook" for 12 hours and then added the wine. that "cooked" for another 12 hours and then in the morning of the party i added the oj. enjoy !

White Sauce for Pasta

simply delicious ! i love the flavor that the bouillon adds. per some other reviews - i also added about 3/4 c of cheddar cheese and some garlic. this is definitely going into regular rotation !!!

Pumpkin Cookies V

This are by far my new FAVORITE cookie !!!! The batter came out thicker than I expected - so I found it easier to use my hands to place into balls on the tray. I also found that putting the cookies on wire racks (with newspaper underneath) and then drizzling the icing saved on alot of clean up ! Also - per other recommendations - I added 1 c of confectioner's sugar to the icing (making it 3 c total).

Chocolate Chip Banana Muffins

OMG these are to die for !!! I've made banana muffins many times in the past and this is my new favorite recipe ! One note - make sure you use muffin liners - as the chocolate chips all stuck to the sides of the pan and made the muffins hard to get out. Even all crumbly - they were delicious but I don't think they would present well :)

Creamy Potato Leek Soup II

I followed the recipe exactly (except I pureed 3/4 of the mixture as many of the reviews recommended)....it was very tasty in my opinion but came out like mashed potatoes instead of soup :( Don't know what I did wrong ?

Cinnamon Roasted Sweet Potatoes

My husband and 3yr old LOVED this dish !!! I diced up one large sweet potato and added 4 apple/chicken sausages diced up and 2 apples diced up to the dish. This is definitely going into regular rotation :)

Oven Pot Roast

This is by far the tasetiest roast I have ever made !!! We used white wine instead of vermouth. My husband and sister in law couldn't stop raving about it ! This recipe is going to go into our regular rotation :)

Slow Cooker Vegetable Chili

This is an AMAZING and easy chilli !!! I have never liked chilli until I tried this recipe. My husband loves chilli - so we were trying to find something we could both like. The only thing I changed was that I added in some cooked chop meat. I have also made this chilli for guests and everyone always raves about it !!!

I love apple crisp, but I'm not a huge fan of an oat crumb. That's why I think this recipe is great ! It's really fast and easy to make and tastes like it was made at a bakery !!!

Italian Style Meatloaf I

I am not a meatloaf lover, but my fiance is - so I make it every now and again. This time I thought I would try a new recipe. When I found this recipe I thought it would be a interesting twist so I decided to try it. And I LOVED it ! It was extremely tasty !!! I decided to use only half of the can of tomatoes in the meatloaf. Also, I used a square pyrex dish instead of a loaf pan and molded half of the meat into an oval mound. Next I added a layer of cheese and the the rest of the meat. Last, I poured the other half of the tomatoes on top. This is by far the best meatloaf I have ever had - I plan on added this recipe to my regular rotation. Happy Cooking :-)
