Cooking Light magazine's Mexican Chicken Casserole

Reviewed: May 9, 2006
This is the recipe I've been searching for! A local Mexican rest. serves chicken enchiladas w/ a cream cheese/enchilada sauce/pepperjack cheese sauce that I CRAVE. This is the closest thing I've found to it! I admit that I didn't use low fat and fat free ingredients per recipe, and I did use 8oz. cream cheese, but it was PERFECT!! We will have this many times to come!!

Roasted Garlic Bread

Very garlicky and wonderful! I LOVE garlic and was extremely happy with this bread! If you don't like a strong garlic flavor though it may not be for you. We will certainly be having again and again!

Baked Chicken with Peaches

Reviewed: May 9, 2006
A little on the bland side, but marinating helps. The second time I doubled and added cinnamon/sugar mix to both sides of breasts and doubled peaches, then refridgerated about 4 hrs. I basted throughout baking time and it came out tastier. Will make again, but w/ modifications.

Used sour cream instead of egg and omitted ketchup for husband. Turned out wonderfully! We didn't even have any leftovers! Great recipe.

Good, but halved the thyme as it's so strong. Very good flavor and so easy to make. We will be having this again.

Spaghetti Pie III

Reviewed: Feb. 16, 2006
Just wonderful! I used rigatoni instead because it's what I had, and it was still great! My family all loved it. The leftovers only lasted two days. There's only three of us and leftovers usually get thrown away-not this time! Thanks for a great new recipe!

Beer Dip I

Reviewed: Feb. 2, 2006
Everyone raved about this all day! So creamy and delicious, and really does go best with pretzels. I tasted it to see with Tostitos, and it just wasn't the same, so continued with pretzels. Every one wants the recipe now, and my husband keeps asking for more! We've had it twice and will be having many more times to come! As of 10/26/06 I have made this numerous times now. My husband even wants it at home quite often and complains when we run out! I didn't take it to a tailgate that we decided to do breakfast for though. I was told that from now on if I don't bring it I would be banned from my own tailgate! Because everyone likes it so much, I now have to times everything by 5 as our tailgate neighbors come over for some too! I've also used various beers to find the perfect one. The best one I've used is Miller Lite. As good as it is already, it was a little better with this. I think I've given this recipe to more people than I have with any other ever! Thank you so very much for the perfect football tailgate dip!

Easy Roasted Pork

Reviewed: Feb. 2, 2006
So easy, fast, fork tender, and very juicy! I doubled the sauce because I always like to have extra, and it was great. The whole family loved it and actually told me to "keep this recipe". That hardly happens, only a few are ever asked for, and my grandma likes pretty much just chicken! No one thought it was too sweet as others had. Just enough sweetness to give something special to the pork. Great recipe!

Bill's Beefuna Burgers

Reviewed: Feb. 2, 2006
I thought this seemed so odd but had to try it anyway. I'm glad I did! Very juicy and didn't fall apart. I did let the mixture sit, covered, in the fridge for about an hour as others mentioned. The flavors melded together wonderfully! We could taste both meats and loved it! I've had requests for these again, and my family never asks to have anything. I always have to decide what to make on my own, so it's a nice change for something to be requested! Great job Bill and keep your wonderful recipes coming!

Baked Lemon Chicken with Mushroom Sauce

Reviewed: Feb. 2, 2006
A nice change for chicken. Very flavorful and juicy. It was so tender-fork tender, as well. My grandma doesn't usually like chicken that isn't fried, but she loved this. She even had seconds! Even my beef-only husband mentioned it was "pretty good". That means a lot coming from him! I made more of the mushroom sauce to serve over potatoes, and it went over very well also. A new favorite. Thanks for a great recipe!

Baked Honey Mustard Chicken

Reviewed: Feb. 2, 2006
Just wonderful! I doubled the sauce to have extra for dipping and it was great. The chicken was so juicy and fork tender. Such a nice change from plain honey mustard. We will definatly be having this over and over again. My husband who doesn't really care for chicken had seconds and thirds and asked to have it again! He never asks to have anything! Thanks for a great new recipe!

Wonderful! The horseradish gives them a nice zing. I used bottled minced garlic instead of the powder, as I had run out the day before. They turned out great and everyone loved them! We will definatly be having these again!

Garlic and Onion Burgers

Reviewed: Jan. 18, 2006
These were great. Moist and didn't fall apart! I did omit the extra salt for dietary reasons as W. sauce has so much, but otherwise followed as written. Everyone loved them! I believe mixing everything then refridgerating helps the flavor so much. Thanks for a keeper!
