Todd's Famous Blueberry Pancakes

I followed to recipe (except I used fresh blueberries and more of them) and they really lack flavor. I don't normally like to eat syrup on pancakes, but without syrup these were really bland.

Streusel Topped Blueberry Muffins

I really like these muffins and will make them again. I'm giving 4 stars instead of 5 because I did not care for the streusel topping. I just didn't like the cinnamon with the blueberries. Next time I will not add the topping, or maybe just dust the muffins with sugar. I also suggest doubling the lemon zest.

Pumpkin Ginger Cupcakes

Made these for a Halloween party and they were a hit! I did cut out the crystallized ginger because I just don't care for it and added a little more ground ginger instead. I will make these again!

Chocolate Chocolate Chip Cookies I

Baking is always tricky for me because I live in Colorado. But, the cookies came out perfect with no high altitude adjustements. These are yummy and soft and this is now one of my favorite cookie recipes!

Airport Bob's Green Beans

Everything is better with bacon, right? The first time I made these I followed the recipe exactly and it was just too much butter. Because of the bacon flavor it is not necessary to add 1/4 c of butter. I know only use about 1 or 2 tbsp butter or just enough to melt the brown sugar. I tend to use less sugar too, but not less bacon!! =)

Chicken and Asparagus Fettuccine

This was really good. I cut back on the butter by a couple of tablespoons, and the sauce was still creamy and rich. I also didn't have any chicken so I put in some ready-made turkey meatballs. Great, quick dinner!

Spicy Jalapeno Chicken Sausage with Mango, Pineapple Salsa

I really had high expectations for this recipe given the great reviews. It was good, but not great... had way too much salsa- the store-bought salsa I used overtook the taste of the other ingredients. I will make it again, but probably reduce the salsa by about half or leave it out entirely. Perhaps I had this problem because I didn't make my own salsa?

Creamy Cucumber Dressing

Here's what I did to avoid the runny problem. I pureed the cucumber and drained it through a small strainer. I used the liquid part to make cucumber lemonade and used the pulp to make this dressing. I added dill as well and it worked out great!

Refreshing Cucumber Lemonade

This was really good! I am giving it four stars instead of 5 because it seems the measurements are way off. I made four servings of this recipe and had to add enough water to make a full quart of lemonade. I also used bottled lemon juice because that's what I had on hand, and it worked great. I didn't want to throw away the cucumber pulp so I used it to make a salad dressing my mixing it with plain yogurt, lemon juice, salt, pepper, garlic, and dill. It turned out pretty good!
