About this Cook
I am a full time student studying Library Science. I am engaged and my fiancee has a four year old daughter. I LOVE to cook but mostly enjoy the feedback from those I've cooked for. I've recently been diagnosed with glucose intolerance and have started cooking low carb items.
My favorite things to cook
I enjoy baking but am unable to eat a lot of sweets at this time. I search for low carb recipes and it is hard to find delicious tasting low carb items. I'm hoping this website will help me out with that.
My favorite family cooking traditions
Nana's Christmas cookies, Swedish meatballs, Mom's orange chocolate chip cookies
My cooking triumphs
I just made my first pumpkin pie and pumpkin soup with actual pumpkins rather than the canned stuff. What a difference it makes!
My cooking tragedies
One Easter I spent a lot of time making a lemon cheesecake. I even piped melted chocolate into butterflies and added fresh flowers to the top. The recipe had a misprint and the cake never solidified...nevertheless, we ate lemon cheesecake soup anyway.

Mini Meatloaves
Amazing :) My fiancee does not like meatloaf and he truly enjoyed this recipe!! His 4 year old daughter also loved it because one mini loaf was perfect for her!

Thai Chicken with Basil Stir Fry
very good - very healthy! I had a basil plant growing in my kitchen & this recipe was perfect for it.
