Black Magic Cake

A-mazing!! Loved, loved, loved this cake. So moist!! I used Hershey's Special Dark cocoa and I I made Fluffy Peanut Butter Frosting for the top, and it was gone! Will DEFINITELY make this over and over!!

Super-Delicious Zuppa Toscana

Loved it! I used half and half with a T of cornstarch instead of heavy cream. I was going to use kale instead of the spinach, but the store was out, so I used the spinach and it was just as good. I also didn't have any bacon, but I used 3 T of bacon fat I had on hand to cook the onions and garlic in. My husband used to work for the restaurant which makes the soup this recipe is based on and he loved eating it there. He said this was just as good, if not better! I will definitely make again!

World's Best Lasagna

This turned out excellent for me. I used one lb each of lean ground beef and hot italian sausage in the sauce. I doubled the crushed tomatoes and tomato sauce and added a can of diced tomatoes, and also added a cup of chopped green pepper to the sauce for more veggies. I added about 4 more garlic cloves, as we like garlic, and seasoned it to my taste(oregano, basil, pepper, parsley). I made 2 pans, one to bake and one to freeze for later. I used 4 noodles per layer in my 9x13 pan and made 3 layers. Next time, however I will use more mozzarella and I will shred it instead of slices.

Mom's Zucchini Bread

It was good, next time I think I will add one more cup of zucchini to make it a bit more moist. I used 2 cups zucchini and added about a cup of shredded carrot to get more veggies in for my picky son. I subbed 3/4 C of white sugar for brown, and unfortunately ran out of vanilla, so I had to substitute 1 tsp lemon and 1 tsp orange. It was actually a nice flavor, but next time I will try all vanilla. I made one loaf and 12 muffins and they all turned out good.

Chocolate Zucchini Bread I

Very good. I used 2 cups zucchini and added 1 cup shredded carrots to get more veggies in for my son. I also used 1 1/4 cup sugar and 3/4 cup brown sugar and added a tsp of dark cocoa powder to the mix. I baked as muffins for about 15-20 min, until toothpick was clean.

Brown Sugar Meatloaf

Really really good. I have made this a few times and it is my go to recipe for meatloaf. I add shredded carrot and pepper as well as the onion, and I also add a little garlic powder. I don't use the milk and actually had to use more bread crumbs as the extra veggies make it moister. Love this meatloaf!

Jay's Signature Pizza Crust

I actually used this dough to make a stromboli and it turned out delicious. I added a little garlic powder and oregano to the dough when I added oil and salt, I also had to use more flour than called for to make dough not sticky. I rubbed the top of the roll with olive oil and sprinkled garlic salt, parmesan, basil and oregano on top after about 20 min in the oven. I will use this recipe again!

Baked Salmon II

Finally!! I really don't like salmon at all, so I've never really made it, even though my husband loves it. I've always wanted to like it, it is so healthy for you, but I've never found a piece I liked. This recipe is perfect, I actually loved it! Took some other posters suggestions and decreased the olive oil to 3 tbsp and upped the lemon juice to 3 tbsp, I also doubled the garlic, but left all else the same and I thought it was delicious!! Baked at 400 for 40 minutes(thick filets)in a glass dish with foil over the top and even my 18 month old very picky son was devouring it. I will DEFINITELY make this again!!

Chicken Breasts Pierre

Good. Almost like a sweet and sour chicken. I didn't have mustard powder or celery seed, so I just added a tsp of brown mustard. I used 2 chicken breasts and a whole can of tomatoes still. Very tender chicken, and a tasty sauce.
