Creamy Chorizo and Chicken Soup

Very good...easy weeknight meal. Added 1/2 lb. shrimp (at the end) to soup. Also added extra can of rotel tomatoes because we like our food spicy! Will definitely make again.

Slow Cooker Chicken Taco Soup

Very easy and pretty tasty. This is a simple recipe to prepare because all of the ingredients are ones I always have on hand! The soup definitely needed more seasoning,though. I added cumin, southwest essence, salt and hot mexican chili powder. Used semi-frozen chix thighs,and it was ready in 5 1/2 hours in my crockpot!

Beer Margaritas

I'm not usually a margarita drinker, so I was skeptical about trying this recipe for a cinco de mayo party. These were a huge hit w/ guests and 4 batches later we ran out! I used corona, which I think complements the flavor of the limeade best. My new go to recipe!

Kentucky Butter Cake

Cannot figure out the rave reviews for this one. Cake was moist, but flavor was nothing special. The sugar sauce had an odd flavor. Cake did stick terribly to the pan, too! Next time, I'll make a regular pound cake.

Penne in Vodka Cream

If you haven't tried this, you're missing out on a terrific dish. I'm not generally a fan of cream based sauces, but the proportions listed here are perfect! The sauce is unbelievably delicious! You do have to simmer the vodka for longer than 5 min. (Keep smelling the butter/vodka mixture until you barely detect the scent of vodka.) Great for a large group of guests.

Cowboy Mashed Potatoes

I, too, was skeptical about the recipe. Glad that I did make it-really delicious! Much easier to prepare than traditional mashed potatoes. Used a sharp white cheddar cheese-added closer to a cup because we love cheese! Will definitely make these again.

Braised Balsamic Chicken

Delicious! Took advice from other reviewers and reduced balsamic to 1/4 cup. I also added 4 sliced cloves of garlic and 8 oz. fresh mushrooms to the sauce. Terrific weeknight meal that comes together quickly!!

Hot Crab and Jalapeno Dip

Delicious! Cheated a bit and used store bought artichoke/parm dip, then added the remaining ingredients as listed. Much better than any hot crab dip I've tasted before.
