Pepperoni Rolls

Reviewed: Sep. 11, 2010
These are great! They are great as is, but if you want something more pizza-ish, you can reduce the sugar in the dough to about 1/3 cup, add oregano, parsley, and garlic powder to the dough, and add about 1/2 cup tomato sauce and 1 cup of cheese to the pepperoni. Delicious! Big hit at parties too.

Gooey Chip Bars

Reviewed: Feb. 21, 2011
I was looking for a recipe to use up graham crackers that didn't require butter, and this was perfect for that. They're quite gooey, as the name implies, and also quite tasty. I think next time I will line my pan with parchment paper because even though I used a generous amount of shortening, they were very difficult to get out of the pan.

Easy Valentine Sandwich Cookies

Reviewed: Feb. 21, 2011
These cookies are great! I've made them 3 times now. I usually roll out the dough between 2 sheets of wax paper (when it's still room temperature) and then chill it for 10 minutes, then the cookies cut out perfectly. I also just re-work the small hearts into the dough instead of baking and serving separately. For the filling, I used 2 parts strawberry jam mixed with 1 part icing, and then regular icing on top. Delicious and beautiful cookies!

Oatmeal Peanut Butter Cookies III

Reviewed: Mar. 7, 2011
These were great! I followed the recipe, and it made 24 sandwiches (48 individual cookies). I made 1-inch balls and then flattened them with my fingers. I also tried making some with mini chocolate chips in the batter, and they are awesome both ways. Purists seem to prefer the plain peanut butter, but chocolate lovers like the addition. Some people also preferred just the cookie with no filling, but I think the filling is amazing. Thanks for the recipe!

Focaccia Bread

Reviewed: Mar. 21, 2011
Delicious! I added the yeast and sugar to the 1 cup of warm water and let it sit for 10 minutes before adding it to the other ingredients. I also used fresh basil on top instead of dried. This bread was great! My husband said it reminded him of pan-style pizza crust. I also appreciated how quick and easy it was to make.

Naan

Reviewed: Mar. 30, 2011
This was great! I added my sugar to the yeast and warm water and then let it sit for 10 minutes. I kneaded the minced garlic into the dough after the first rising, as the recipe suggested. I didn't add the butter at the end because I found that it was moist and flavorful enough without it. This is just as good as the naan we get at our Indian restaurant (and maybe better). Delicious!

Homemade Chewy Granola Bars

Reviewed: Apr. 2, 2011
These were so good! Ok, I'm going to be one of those annoying reviewers who changed the recipe in 6 different ways, but I used honey instead of corn syrup, coconut oil instead of butter, almonds instead of the sunflower kernels / sesame seeds, Craisins and dates instead of the raisins, omitted the wheat germ (didn't have it), and reduced the chocolate chips to 1/3 cup. After trying them, they're absolutely delicious, but I think next time I'll try reducing the oil and sugar a bit and adding more peanut butter. Also, I think this is a great recipe because you can interchange different nuts and dried fruits, depending on what you like and have on hand. Thank you!

Chinky's Mango Bread

Reviewed: Jul. 21, 2011
This was a very good and nicely textured bread, but I felt that the cinnamon overpowered the mango flavor a bit. I might try it again with no cinnamon and maybe replace some of the oil with mango purée to add to the mango flavor.

Fresh Fruit Tart with Ginger Snap Crust

Reviewed: May 27, 2012
This was fairly easy, beautiful, and delicious! I used about 1 1/3 cup of ginger snap crumbs and 2/3 cup of graham cracker crumbs - crushed in a food processor. I did not add sugar to the crust. I also used the lower fat cream cheese, reduced the sugar slightly in the cream cheese mixture, and key line juice instead of lemon juice. The fruits I used were kiwi, peaches, strawberries, and blueberries. This was great!
