Cilantro Jalapeno Hummus

Great base recipe! Only things I did differently were to add an additional 1/2 jalapeno and quite a bit more cilantro as I thought it needed a bit more kick (and I'm not a fan of too much kick!). I added about 2 T of tahini and added more olive oil for a creamier consistency. I prefer using a food processor for hummus. A keeper, thanks!

Pineapple Crisp

This was delicious! By far the best crisp topping I've had. I thought maybe just canned crushed pineapple would be dull, but on the contrary - it was wonderful. I did the recipe as is and served warm with top quality vanilla ice cream. I'll try this topping with other fruits too. A keeper!

The Best Rolled Sugar Cookies

I thought these were only fair. I followed the recipe exactly and found them bland. The dough was delicious, but the final cookie lacked flavor. They need icing or sugar - I added raw sugar to them which helped. I'm a pretty good cook too, so no mistakes. Plus, these cookies spread a little so whatever shape you use is altered a bit.

Chicken Chimichangas with Sour Cream Sauce

These were okay - certainly easy to prepare. Needs a lot more spice as the meat was too mild. Oh it was good, just not enough flavor. I didn't wait for the water to cook down to 1C - takes too long. When it wa at about 2+ C, I stopped cooking and used 1C or the chicken "water" in the sour cream sauce - really livened that up. Plus, I baked them which is a bit healthier. I'd make this again, but up the ante with the spices....

Hot Fudge Sauce

This is excellent. I used a Ghirardelli seme-sweet bar (4oz) and it was rich and thick. I might try bittersweet next time to compare. It is sweet but hot fudge sauce is supposed to be! This one is a keeper.

Coffee Liqueur Brownies

These were pretty good. I didn't buy the one pan thing either, preferring to melt the chocolate with the butter in a double boiler. I used espresso powder as that's all I had. Not sure where the picture came from as there's no frosting recipe though these really don't need it. They're moist and flavorful. My family enjoyed them. Next time I'd serve them with coffee ice cream.

Corned Beef and Cabbage I

This was excellent! I followed the recipe exactly and it's delicious and exactly the way my Mom made it. The only thing it needs is a nice sprinkling of salt and pepper once it's on your plate. Hubby is a spicy food guy so it won't be a staple, but it's a keeper and I'll make it again, if only for me!

Chicken Marsala

Special Buttercream Frosting

Excellent buttercream in a hurry. I needed one quickly and this one was easy as I had all the ingredients on hand. Very tasty. Since it was a layer between cake and fondant it didn't need to be pure white so I used butter flavor Crisco sticks and (my favorite) Nielsen-Massey vanilla paste. That added nice butter-vanilla flavor. Not as smooth as some I've seen, but still, I'd mke this again as it was soo easy and tasty!

Sweet Corn Cake

Excellent! Exactly like the restaurant version (Notably Cheesecake Factory and Blue Mesa). I'm glad to have the recipe, thanks and look forward to incorporating it into other meals... Yum!

Orange Crunch Cake

This was good, but next time I'd make it as a coffee cake using the crunch filling in the center of a bundt type cake and drizzling a cream cheese icing on top. Cake had great flavor - I took others' suggestions and added 1 t. orange extract. I used the cream cheese icing from the site which was okay (too sweet for me). This would make good cupcakes too, with the crunch as a filling. I'd make this again, but not as a layer cake.

Amy's Barbecue Chicken Salad

This is absolutely delicious. My entire family loves it, including my young children. In fact, my 12 year old requested this as her upcoming birthday dinner! With good plate presentation it rivals any restaurant. And super easy! You can't go wrong with this salad!

Tomato-Cream Sauce for Pasta

This was excellent. As I had been searching for something like this, but creamy so I made one change. Before adding the cream and butter I put the tomato/onion base in my food processor and processed until creamy. I then returned it to the pan and added the cream and butter. My husband LOVED it, as did my entire family. I added fresh basil leaves and a dollop of goat cheese to each serving (over angel hair). A keeper.

Hot German Potato Salad III

Delicious! I had hoped to recreate my mother's recipe that I remember and sure enough this one is it. Just the right about of tart but not too. Only change I made was I used apple cider vinegar as that's all I had. My husband said this recipe is a keeper. Thanks!
