Irish Cream Ice Cream

Excellent! I made this recipe exactly as stated, and it was wonderful! So rich and delicious, with the perfect texture of homemade ice cream! That's not even mentioning how easy this recipe was - I saw one other recipe that wanted me to reduce down the cream, etc, etc... this was much simpler!

Stuffed Eggplant Parmesan Rolls

A great recipe! I bought an eggplant not really knowing what I was going to make with it, and I'm so glad I found this recipe. I wasn't sure how the rolling and everything would work, but the recipe was spot on! We added some other ingredients to the ricotta filling (bacon and spinach) mostly because we had ingredients we needed to use, but it would have been just as good without! Wonderful!

Buffalo Chicken Dip

A great starting point! I have made this multiple times, and it is always hit! However, I change mine a decent amount. In my opinion, there is too much of the "sauce" items and not enough chicken in the original recipe. Last time, I added extra chicken AND reduced cream cheese and ranch. Plus, I hardly add any cheese to this recipe - I just don't think it's necessary. Like I said before, a great starter recipe! Just change it to your own taste!

Donut Muffins

Quick Gnocchi

This is great! It's still a bit of work, as working with dough always is, but it's worth it for fresh gnocchi! So delicious! I made a double recipe for my husband and I and we froze half of it... the serving size is about perfect!

Pumpkin Pancakes

These didn't have as much pumpkin flavor as I expected, but they were still wonderful! They are VERY moist and fluffy - great as just a normal pancake recipe! Don't be shy on the spices - it seems like a lot when you're adding it, but I almost wish I would have added more!

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

This was delicious! I cut the butter in half, and added 4oz of cream cheese - this was perfect for my tastes! I think the 1/2 c of butter is a little much. I also substituted the boiling water for milk, to make a creamier sauce. It was the perfect consistency, and wonderful all around!

Meatball Soup

I changed this recipe quite a bit, but it was a great base to go from! I wanted to share some of my changes for ideas for others! I made my meatballs from scratch and cooked them in the slow cooker all day with the broth. It added a lot of flavor! I added canned tomatoes, green beans, and fresh mushrooms as my veggies. It was amazing! Turned out really great!

Yellow Squash Patties

These are delish! A wonderful way to eat your veggies! :-) I pretty much made it as is, with the addition of a few spices and garlic. My squash was still draining quite a bit of juice after over an hour, so I ended up actually squeezing it out over a bowl. Worked pretty well! Would definitely make these again!

Slow Cooker Baked Beans

This was a great recipe! I was a little scared after reading some of the reviews that my beans wouldn't be done on time, but they were! I took them to a party, and everyone loved them! I will be holding onto this recipe for sure!

This is a simple and delicious recipe! It is VERY minty, and the perfect amount of chocolate. I would almost say that it is too much mint, but a very good recipe I will keep in mind in the future.

Gingerbread Men

I love this recipe! I was intrigued by the butterscotch pudding, as well as the idea of a milder gingerbread. I was worried it wouldn't have the bite I like, but it was perfect! This will definitely be a go-to recipe for me for the holiday season!

Fat Pete's Fudge

All of the other fudge recipes I looked at were so intimidating! Not only did this recipe have wonderful reviews, it gave simple instructions without the need for a candy thermometer! And on top of that, I made it and it worked! This is delicious fudge with a great consistency and flavor!

Chocolate Coated Peanut Butter Crackers

Just made these and they are wonderful! I used 3/4 lb. of chocolate flavored almond bark, and it made about 30 finished sandwiches. I did some completely covered, and some dipped- one side with no chocolate. They look very nice with the sprinkles on top! Will be giving these away on Christmas cookie platters!

Baked Potato Soup

This is a great recipe! Like someone else said, it's great for customizing to fit your own likes! Here's what I did: 1. I heated the chicken stock in a small pot, and added the cubed (uncooked) potatoes to the stock. 2. While the potatoes were boiling, I cooked the bacon in the large pot, removed the cooked bacon, and sauteed the onion and garlic in the drippings. 3. I added the flour and seasonings as the recipe stated, then dumped in the entire potato/stock mixture. 4. Instead of a cup of half-and-half (which I didn't have), I used 3/4 cup milk, and 1/4 cup sour cream (as suggested by other reviewers!) 5. After this was heated, I added the bacon back to the soup and added about 1/2 cup of colby cheese (because it was what I had on hand). I personally nixed the hot sauce. The result= delicious! It's waiting on the stove for my husband to get home, and I can't wait to devour it!

Pork Chop and Potato Casserole

Yum! I actually made the pork chops without the potatoes, and it was very easy! I followed the advice of other reviewers and sauteed some onions in the pan, and I also used some parsley and garlic powder to add some flavor! With these small changes, it was a very delicious and SO easy! Thanks!

Old Fashioned Apple Dumplings

This recipe is amazing! I made it using lura red (slightly tart) apples, and it is my husband's new favorite! :-) I made it pretty much as-is, except with store-bought crusts. I also replaced some of the white sugar with brown sugar in the sauce. As per the recommendation of another reviewer, I poured the sauce over the dumplings multiple times throughout the cooking, which I think really helped them soak up all the flavor of the sauce. Overall, DELICIOUS! A wonderful recipe! Thank you!
