Wouldn't change a thing! I've made this both chunky and smooth. It was a stand out hit!! Took less than 10 minutes to make. (My avocados were so ripe, the peel just fell off!)

Pork Chop Dinner for Two

I prepared this dish exactly as it appeared in the recipe and it was not well received at all. It was bland and boring and no one finished it. Won't use this again.

Greek Shrimp Dish From Santorini

Outstanding! So FULL of flavor! I served this over whole wheat rottini. I didn't have time to bake so after I simmered the wine mixture for an hour, I added the shrimp to the skillet and cooked until pink. Then I added the feta a simmered for 5 minutes more. This one is a keeper!!

Mediterranean Quinoa Salad

Outstanding! If you like tabouleh salad, you will like this. Super healthy too! I left out the chicken and I only needed half of the lemon juice/olive oil as the recipe called for. Also, I used organic chicken stock instead of bouillon and water. Served room temperature and it was great!

Steak Marinade

Very tasty marinade! Good on chicken thighs and shrimp as well! Do NOT need to add salt. The soy sauce is salty enough.

Gingered Garlic Shrimp

This is such an easy, delicious recipe. I keep peeled, deveined shrimp on hand in the freezer and I add the shrimp to this while still frozen and it's perfect. Only change I'd make is that I'd switch out half the chicken broth for dry white wine for a little more zip. Also, I use whole wheat pasta.
