Annie's Fruit Salsa and Cinnamon Chips

This was a huge hit at my bbq tonight! The chips were fantastic! HOWEVER, make sure you bake the chips long enough or else it will be really tough. If the chips seem tough or hard to chew, just put them back in the oven for 5-10 minutes. I ended up baking my chips for about 20 minutes for each batch. I used a pizza cutter for the chips and it worked out great!! I also added nectarines and blueberries for color. I think next time i'll used a different kind of apple because the golden delicious apples were a tad sour. A lot of water juice/liquid comes out of this dip from the sugars so I just poured some of the juice out so it wouldn't be so soupy. I also didn't put any brown sugar because other reviewers said it was too sweet. Anyways, awesome summer snack! Thanks so much!!

Blueberry Lemon Bread

This turned out GREAT!! It was more of a cake than bread but I was completely satisfied. =) I did make a few changes from suggestions of other chefs out there.. Instead of using melted butter, I used softened. Also, I microwaved the lemon juice and sugar for the glaze for a little over a minute. Oh and I had to bake it longer than it said, I ended up baking it for about 1 and a half hours. It turned out really moist and delicious.. Oh yeah, and I also used another suggestion to keep the berries from sinking, I put my washed my berries and put them in the freezer while I was preparing and mixing..and getting the lemon zest, then once it was time to put the berries in, I put a tablespoon of flour on the berries and mixed it up. I used a more berries than it called for..but heck, why not? =) Thanks for the great recipe!!

Cone Cupcakes

This gets 3 stars because it was cute. I used mini ice cream cones to make it look super adorable. That was a success. However, taste wise..Negative! The cones got incredibly soggy over time. So if you make these, I would suggest eating them within an hour. However, I did manage to get a nice picture out of these. =)

Beef Pho

This was my first time making pho and it was really good! BUTTTT I have some recommendations that I think will make a load of difference. My soup didn't really have the "pho" flavor entirely, so I had put some "pho beef flavor" bullions into my pho. I just added one cube at a time to taste. That really brought out the pho flavor. (and these cubes are super cheap! 79 cents :) !!!) I also took my onions, cut them in half, wrapped them in foil, and put it on the stove to cook them a bit. Also, I ended up finding a packet of "pho seasoning" that had star anise, cinnamon, cloves, and other ingredients in there so I got that instead. It came with a seasoning bag too that you can throw right into the soup base. I also used an extra slice of ginger. Also, I could not find beef knuckle, so a nice vietnamese lady told me to get beef bones instead and it worked out great. Oh and you MUST get the fresh noodles that come in the regridgerator section, this will make a HUGE difference in the taste of your noodles. I originally bought the dried flat pho noodles and I did not like them at all. My boyfriend (who is vietnamese) told me to get the fresh ones from the cold section and those were like the ones you get from the store. =) Hope my review helps some folks! =)

Pumpkin Pancakes

I wanted to make pumpkin pancakes for a long time since I first tried them at IHOP. The batter was super thick so I ending up messing up the first pancake because the middle didn't cook and therefore the pancake burnt. Make sure you use lower heat on these pancakes because they burn fast. Spread the batter out right after you place it on the griddle. I thought these pancakes were a bit too hearty and condensed. I also didn't taste much pumpkin flavor in these. They were just okay to me.. I put syrup, caramel, and topped them with toasted pecans. The syrup and caramel added a nice touch though.

T Bird's Beef Jerky

I didn't use the exact ingredients from this recipe for my beef jerky. However, I just used it for tips on making the jerky. My oven does not go down to 150 degrees, so I put it somewhere between warm and 200. TIP!! = hang a thermometer from the oven rack to check and make sure your oven is at the right temperature. It was extremely tricky to get it to the right temperature and I had to make several adjustments. Another tip..I hung my jerky from toothpicks, but the meat kind of curled around itself, so after being in the oven about 2 hours, I realized it wasn't drying out completely, so I took the jerky off the toothpicks and laid them across the oven racks. (With the park that didn't dry facing down). This was extremely important to ensure that all the jerky dried properly! My jerky ended up being a huge success! However, I think I may buy a dehydrator to make it a little less stressful next time! =)

Sweet Potato Pie I

This was my first pie ever and it was a huge success! I followed the recipe exactly except for one little change. As another reviewer mentioned, I put a teaspoon of flour in with the mixture to give the pie more structure. I am really glad I did because I think the pie would have been too soft without it. Thanks for the recipe! Perfect for Christmas. =)

Sesame Pasta Chicken Salad

I thought this salad was good. However it was a little greasy and I wish I would have cut down on the amount of oil. I used olive oil instead of vegetable oil. I put bbq chicken on top instead of shredded chicken.

This steak was AMAZING!! Thank you so much for the recipe! I also only used about a tsp of salt since other reviewers said it was too salty. I didn't have rosemary so I left that out. Thanks again. =)
