Recently divorced and on a very tight budget but very busy at work, I'm all about the make ahead recipes at the weekend and eating leftovers during the week. Thankfully I could eat the same thing every day when I find a great recipe which helps with the leftovers but cooking a couple of times a week gives a reasonable variety.

Baked Alaska for Christmas day and steaks on the grill new years day.
My cooking tragedies
A roommate cooked a quiche directly on the oven rack once....He was appalled to see a nice ring of crust left on the rack and the rest of the quiche on the floor of the oven. The smell was really bad and cleanup took a long time.

Easy and Delicious Chicken and Rice Casserole
Cooked this in the slow cooker all day - smelt really good. Unfortunately was very, very salty. Next time I'll drop the onion soup mix.

Sam's Famous Carrot Cake
Great cake! I missed out the walnuts as I was allergic and made in two 8*8 pans for 50 minutes and it turned out great. Took it to Easter party and everyone loved it (and I don't think they were being polite either!) Topped with the Cream Cheese Frosting II like many other people.

Slow Cooker Chicken Marrakesh
Only just had enough room in the crock pot for this! A very easy recipe to prepare and leave. Smelt really good whilst cooking although the spices smelt pretty strong but I was surpised to find that it didn't taste overtly spicy (if anything it could have done with more spice). I found the chicken was a little bit too dry. Went back for seconds last night though and looking forward to left overs this week.
