Lemon Thyme Rice

I made this to serve 18 people at our Seder meal tonight. It was the perfect compliment to our lamb. I made it all in one batch in a large pot. It worked perfectly. Thank you.

Peking Pork Chops

I made this for a potluck at our church. I used a pork tenderloin that I sliced into about 1/2" chops. When done I had about 18 chops that I layered in my crockpot. I followed the recipe exactly and doubled everything. I put the chops and the sauce in separate containers in the fridge overnight and put them in the crock in the morning. I cooked them on low for about 1 hour until we needed to go to the church and then plugged them in at the church. One of the church ladies turned them up to high for about an hour and then turned them back down. They were very good according to everyone and I had none to bring home. Thanks Lynda for a great recipe.

Butternut Squash Layer Cake

This was a great recipe. I made cupcakes (recipe makes 24 cupcakes same as a box mix) out of it because I needed something for a reunion party. I did add a 1/2 tsp. of Apple Pie Spice to the dry ingredients to spice it up a bit. I also made Cream Cheese Frosting to frost them instead of the included frosting recipe. Everyone raved over them.

Easy Chicken Divan

Overall a good basic recipe. I doubled it and realized after I baked it that I had way to much sauce. I would say that I would probably use 3 cans of soup, 1/2 cup of the mayonnaise and 1/3 cup of milk when I make it again. The reason I doubled it is I have three growing kids, and we like leftovers. Quick meal for a weekday night.

The Best Rolled Sugar Cookies

This recipe makes a lot of cookies. It is nice because it is simple with not many ingredients and nothing that most bakers wouldn't already have in their cupboards. I did double the amount of Vanilla, but that is the only change I made (just a personal preference). My husband and my father both think these are absolutely the best.

Cindy's Beef Tips

I made this recipe entirely in my cast iron pot. It turned out great. I browned the meat in the oven on top of the stove and took it out and added a little of the broth and onions, green peppers, and fresh mushrooms. After they had cooked down, I added the meat and the soup/broth/milk mixture back to the pot. I placed the entire thing in my oven at 325 for 2 hours. The gravy thickened up very nicely this way.

Mom's Applesauce Pancakes

I made these for my kids and they loved them. I made 1 1/2 times the recipe as my kids devour pancakes. I liked them but felt they didn't have enough apple taste to them.
