Happy Easter! Made this early this morning for our Easter breakfast prior to church. Everyone loved it! Wish the potatoes were a little crunchier, but I'll bake them for a while next time before adding the rest of the ingredients. I also cooked the onions with the sausage. I'll probably use more onion next time too. Thanks for a great start!

Greek Chicken Pasta

Very good! Don't drain the artichokes or tomatoes. The extra liquid is great. I used whole grain pasta and even my very picky 13 year old ate three helpings! I will add mushrooms and kalamata olives next time. Even good cold the next day, like a pasta salad. Thanks for the great, quick dinner recipe!

Slow Cooker Pot Roast

So easy and so good! I added potatoes and increased the carrots. The gravy was thick and so flavorful. Only enough left over for my husbands lunch today. Everyone loved it. So much easier than my regular pot roast. I did get a bone in roast so we could share with the dogs! They were happy too! We'll have this again soon.

Salisbury Steak

My family loved this dish. I did not put in any ketchup but used the cream of mushroom soup with the condensed french onion soup, soup mix packet and a bouillon cube. I served with garlic mashed potatoes. Another hit from Allrecipes!! I only gave it a four because I changed the recipe some and although I enjoyed the meal I didn't like it as well as my husband and sons. However they really loved it!

Mexican Grilled Chicken

I was really unsure about this recipe. I was wrong. It was fantastic! I should have defrosted more chicken breasts and cooked twice as many as I did. This was so flavorful I am tempted to do it again tonight. I served it with Spanish rice and fresh green beans. Yummy!

Pumpkin Cheesecake Bars

I took these to a supper at church. Everyone loved them, except me! I was not impressed with the crust made with the cake mix. It tasted dry and I did not like the flavor from the pumpkin pie spice. Next time I will try a spice cake mix and use cinnamon, ginger and cloves like I do with a pumpkin pie. Maybe some extra margarine to make the crust more crumbly.

Tacos in Pasta Shells

This was a huge hit with my family. I used more taco sauce and more cream cheese in the meat. It had a wonderful flavor and I can't wait to make it again! I did end up using 22 shells instead of 18. It is a little messy when stuffing the shells, but so worth the mess! This would be fun to do with kids who like "hands on" cooking fun. I wanted to send a picture but the family didn't want to wait while I looked for the camera! There were only three shells left for my lunch the next day! Yum! I may have to double the recipe for the next time. And there will be a next time really soon!
