Rice Quiche Crust

Reviewed: Oct. 13, 2010
I love how the quiche soaked into the rice. This is a fantastic and easy recipe, far simpler and cheaper than regular crusts.

Albondigas

Reviewed: Nov. 11, 2010
Que sabroso! My sisters and i loved it, and I love how cheap it is to make. The only thing I had to specifically buy was the ground beef. Everything else was on hand or improvisable. Lack of bread crumbs equaled a couple pieces of bread crumbled up with a packet of taco seasoning. I wish I had had hotter salsa, but my sisters like the mild version we had. Thanks for the great recipe!

Portuguese Sweet Rice

Reviewed: Aug. 6, 2012
We ran out of milk, so quite a few changes were made; we used equal parts soy milk and rum to make up the difference in liquid so the rice could cook. It was absolutely delicious. I also added an old banana, a crumbled up old bun, a handful of raisins and some generous dashes of cinnamon, nutmeg, and allspice. So what really happened was this hybrid rice-bread pudding, and everybody loved it. Thanks for the great start!

Spiced Butternut Squash Soup

Reviewed: Oct. 8, 2011
Might be biased since I love this squash...oh well! I think I might have added 2x as much squash since I didn't measure...turned out a bit like stew but still very good

Ratatouille Bake

Reviewed: Sep. 18, 2010
My sisters said I needed to make this more often and there were no leftovers. This of course after I was told during the entire prep that they don't like eggplant.

Oatmeal Gingersnaps

Reviewed: Nov. 27, 2011
I had had these at 4stars, but letting them sit for a night made them become 5 star cookies. They tasted rather floury straight out of the oven, and I felt that maybe they had needed more spices, but the extra time got it to the taste you think of for gingerbread. I added a little garam masala, cinnamon and ginger to the sugar I rolled the next batch in, and wow!

Italian Bread Bowls

Reviewed: Aug. 14, 2013
These turned out gorgeous and everybody raving. I added a little garlic powder and oregano to mine and only made 6. Very dense inside, delicious straight out of the oven and the next day too.

Cuban Pork Roast I

Reviewed: May 12, 2012
This turned out fantastic, the only variation made was my grocery store didn't have pork shoulder so I used a 4lb pork butt. The time necessary to get the center completely cooked was around 3-3 and a half hours though, so my only suggestion is to change the time listed in the recipe.

Classic Cuban Midnight (Medianoche) Sandwich

Reviewed: May 12, 2012
I made these using the Cuban Pork Roast I from this site, and it was absolutely delicious. We did thicker slices fresh out of the oven and skipped toasting. My boyfriend is not a fan of mustard, so that was left out, but did add garlic powder to the mayo, similar to another reviewer's suggestion.

Good New Orleans Creole Gumbo

Reviewed: Aug. 18, 2013
Amazing! Only changes were cutting it in half, adding a little more water since our stove is really hot, and adding a little more shrimp instead of crabmeat. The shrimp melted like well cooked lobster, not at all tough like I thought 45 minutes of cooking would make them. Thanks for the great recipe!

Blueberry Cookies

Reviewed: Jul. 3, 2012
These are absolutely delicious! I made a few tweeks, mainly substituting the juice of one lemon and some of its zest for extract while adding in a dash of vanilla extract. The other main alteration was adding in some white chocolate chips. I think the boyfriend would have proposed right then and there if he had found anything ring shaped. They are a bit scone like as another reviewer said, but we both love that texture of cookie anyways.

Sweet and Savory Slow Cooker Pulled Pork

Reviewed: Jul. 24, 2013
I followed this exactly up to the part for the sauce going into the crockpot. Boyfriend had drank the rest of the root beer! Diet dr pepper was the closest alternative available, and everything went smoothly from there. The meat was so incredibly tender and flavorful without being really saucy. Great recipe!

Cathy's Banana Bread

Reviewed: Jul. 11, 2012
very moist and tasty, and baked perfectly for me; granted I didn't necessarily do 50 mins and just kept tabs on it. Also I added a cocoa swirl to my bread and muffins which gave it a very sophisticated look, and brushed the pans with olive oil since we were out of pam...I have never had such an easy time getting muffins out, not a single bottom broke off.

Chelsea's Bacon Roast Chicken

Reviewed: Jan. 2, 2011
delicious! I didn't have enough bacon and it was still absolutely fantastic. I think I like that the bird I used was a bit smaller, making the coating thicker. I will definitely be making this incredibly inexpensive and tasty dish again.

Hawkeye Pork Roast

Did not need to go all the way to 160* as that made it a little dry, but still very tasty

Coconut Macaroons III

USE TIN FOIL!!!! The first 2 batches I did on the paper and they burnt to the paper each time, even after I tried lowering the heat. The next batch I did on the tin foil, being fed up with trying to salvage them, and voila! They turned out all pretty and even without sticking.

Addictive Sweet Potato Burritos

Reviewed: Aug. 26, 2012
I just made a bunch of these to help me survive the first week back to taking and teaching classes; so far the verdict is pretty good, though I don't know if I'll feel the same by Friday. I really should have splurged for the larger flour tortillas instead of getting the 39 cent little corn ones. Instead of packaged burritos I have little containers of sweet potato tacos essentially.

Butternut and Acorn Squash Soup

I loved it, my mom looked at the color and said icky. I don't feel her opinion is valid on this since she didn't actually try it. Was great with ginger rice like curry

Simple Cauliflower Soup

Reviewed: Oct. 15, 2010
very good. I treated it as a base since we like things a bit spicier, and added in some red pepper and such. Will probably either double the amount of cauliflower or add several more potatoes to make this actually feed everyone next time.
