Basic Corn Muffins
I was in a hurry and needed a quick, easy alternative to the recipe I usually make (that is Absolute Mexican Cornbread). This one was a snap to whip up and is a good basic recipe. I baked these for 15 minutes and they were just right, so be careful not to overcook. I did follow another reviewer's suggestion about adding another egg and some cheese. I am sure that this helped it immensely. Even with the cheese and a little extra cooking oil I added, they were still a tad on the dry side. I will make this recipe again, but I will add a little extra liquid or some sour cream. Thanks for sharing the recipe. It is good, but it would be even better with the extra egg and a little more oil, milk, or butter.

Cracked Sugar Cookies I
If you're looking for a good, easy, bakery-quality sugar cookie recipe, this is it! I've made lots of sugar cookie recipes in the past, and they have usually turned out either not sweet enough, or too bland, or too crunchy, or too flat, or like a biscuit not a cookie...the list goes on. But these, WOW! It'll be awhile before I try a different sugar cookie recipe. These were perfect...thick, but not "biscuit-y," chewy, but not gooey, and sweet with plenty of flavor. They are great as is--but you could add a little more vanilla or lemon flavoring if you want a little extra zing. Thanks for sharing the recipe.

Best Chocolate Chip Cookies
This is a good basic chocolate chip cookie recipe. The texture is a good balance between "airy" and dense. I was impressed with how well they kept their chewiness (probably due to the 1 cup of brown sugar)...which leads me to my only critique of this recipe--it's almost sickeningly sweet. I think you could easily cut the sugar down and it would still be plenty sweet.
