Artichoke and Sun-Dried Tomato Chicken

AMAZING! I didn't have sundried tomatoes. I used one can of plain diced tomatoes, and substituted basil pesto (green) for the red pesto, as that's what I had. Served it over al-dente penne pasta with shredded parmesan on top and it was a hit.

Chicken Lo Mein

Delicious and easy, I also used a bag of frozen stir-fry veggies. I've never used sesame oil before, found the flavor to be somewhat strong, so make sure you stick to the measurement and taste it prior to adding more to your liking. I will definitely make this again.

Chantal's New York Cheesecake

Excellent, easy recipe. For some reason, I ended up with too much batter. So, next time I will pack some graham cracker crumbs into a pie plate and use the excess in there. Mine cracked, but probably bc I left it in the oven for more than 6 hours. It was still delicious and loved by all.

Dark Chocolate Cake I

THE BEST and easiest "from scratch" chocolate cake recipe ever. Also makes yummy cupcakes! Just bake for about 20-22 min instead, till a toothpick comes out clean. Top with "Cream Cheese Frosting II" by Janni. Yummy Chocolatinessssssss.

Taco Pie

This was very easy and went well with the kids and hubby. Other ratings criticize the fat and calorie content. As a general rule, if it's fast and easy, it's usually not good for you. :-) So, once in a while as a speedy dinner, it's not gonna kill you. I thought that the amount of tortilla chips seemed excessive, as I had a lot left over sliding around the pan when we were done diving in.

Easiest Focaccia Recipe

I have tried unsuccesfully for years to make a focaccia which resembles the restaurant variety. I made this last night and it was a hit with everyone! Only wish I had doubled or tripled it. What I love was that I could whip it up an hour before the meal, as opposed to "starting the sponge" the night before, as many recipes advise to do. I did use different flour, as self-rising was all I had on hand. Also, I ground up some dried rosemary and sprinkled on top. LOVED the authentic Italian taste of this bread. Next time, I will double the recipe and make smaller, individual loaves. Will probably have to reduce the baking time.
