Artichoke Chicken

Excellent! Followed recipe except use chicken tenders instead and season it beforehand. I've made it with big chicken breasts and not as good. I guess the tenders just cook perfectly and more flavorful.

Bacon Cheddar Deviled Eggs

I have made this many times and I always get asked to make them again. Follow the recipe to a T except I think I throw in a lil extra bacon and cheese. I then sprinkle the tops with Slap Yo Mama (cajun seasoning). Big hit.

Healthier Broiled Tilapia Parmesan

Fast, easy and delicious! I used old bay seasoning in lieu of celery salt/onion powder. I also seasoned the fish with lemon and old bay on both sides prior to broiling. I'm glad I did b/c I think it would have been too bland otherwise.

Baked Lemon Chicken with Mushroom Sauce

Several folks suggest cooking in a skillet, however I thought it came out absolutely perfect baked uncovered for 30 minutes. Only thing I changed was using montreal chicken seasoning w/ EVOO before baking and to the sauce adding minced garlic, chopped red onion and capers. It was AMAZING on bed of linguine!

Bacon Feta Beans

This is a great side dish to bring to a BBQ or summer party. I use the Green Giant Full Length Green Beans Steamable Bags and add crumbled bacon, feta & seasonings as soon as I take it out of bag. So fast and tons of compliments!

Spinach Stuffed Chicken Breasts

I LOVE THIS! I used turkey bacon, substituted mayo with greek yogurt, used fresh spinach instead of frozen and added some shredded mozzarella cheese I had on hand. Next time I may add some finely chopped jalapeno for a kick.

I made this for St. Patty's day and we really enjoyed it. So now I know I'm a leek fan! The only change I made was adding bacon, but next time I think I'll do cornbeef or ham. To me it fit better as a brunch dish. Enjoy!

Curried Coconut Chicken

I'm a newbie cook, but love exotic dishes that are usually too complicated for me to attempt. This is the BEST curry recipe for a beginner and it taste SO AMAZING! After reading reviews, I opted for 4 chicken breasts, an extra tablespoon of curry powder, substituted tomato sauce with tomato paste (A MUST), used UNsweetened coconut milk and half the amount of sugar. I also added a stalk of celery finely chopped and 1/2 yellow bell pepper after the chicken. Then once the milk and tomatoes were put in, I added a couple dashes of cinnamon, chili powder, cumin and a lil red pepper flakes. The 3 biggest complaints I read was that it's too sweet, too bland &/or not thick enough. Follow above and you won't have any of those problems! My boyfriend says it's one of my best dishes yet. Colleen's Slow Cooker Jambalaya

I'm from the south and my boyfriend is New Orleans bred so I can tell you, this is not authentic New Orleans Jambalaya...however, whatever you want to call it, it's AWESOME! We both love it and will definitely be making it again. I used two chicken breasts, which wasn't enough..next time I will probably use 4. I used 1/2 the amount of cayenne and there was plenty of heat. I did use spicy fire roasted diced tomatoes and "Slap Yo Mama" seasoning for the cajun seasoning, so I'm sure that contributed to the heat. Also added about 1 1/2 teaspoons of chopped garlic. It's fine without the shrimp, but who turns down shrimp! Either way will be very satisfying. I boiled about 3 cups of brown rice separately and dumped it in the last 20 minutes. First night it was a little soupy but we were very pleased with the flavor. 2nd night it thickened up closer to jambalaya status, but not what we down south consider jambalaya. Regardless, it's a great cajun dish that is definitely going to become a regular with us. Thanks for sharing.

Amish Breakfast Casserole

This was good, but a little too cheesy for me and trust me that is hard because I'm a huge cheese lover! The swiss was overpowering and to me, made it a little funky. But - it's your own personal taste, for me 3 stars.
