Best Ever Muffins

Crazy Cake

Wow! I made this two days in a row. First I made one as a bunt cake for a potluck (dusted with powdered sugar). The next day I made it as a half sheet cake for a birthday party. Everyone was amazed when I told them it was vegan.

Italian One Step Casserole

Fantastic. I made my own Italian Turkey Sausage and added cauliflower, halved brussel sprouts, and bell pepper to the veges. I also browned off the meat and onion in my cast iron pan, then put the whole thing in the oven with the lid on. Husband and brother both loved it. Thank you for the great base.

Chococonut Chip Cookies

Fantastic! I was worried that there was too much flour when I was mixing, but they cooked up perfect. Maybe next time I'll use choconut extract instead of the vanilla. Mmmmm, choconut and chocolate are the best.

Cabbage Fat-Burning Soup

great flavor, and after entering the recipe in to a calorie counter it came out to be about 100 calories. I would suggest adding a little hot sauce or Worcestershire just to liven it up a bit.

Fantastic. Everyone liked it, even the coconut haters said it was great. I used another reviewer's crust recipe cut in half (so it was 1/2 cup butter, 1/4 cup powdered sugar, and 1 cup flour) for a single 9 in pie.

Buttery Rolls

OMG! These are fantastic. My mother, who is notoriously picky, loved these rolls. They are my new standby. I did let them have a longer second rise than the recipe called for, but they seemed just perfect to me (light and fluffy).

Easy Granola Bars

Not a huge fan of the flavor. They need something salty to balance the sweetness of the condensed milk. If I make these again I'll use some kind of salted nut. I would have given 3 stars, but +1 for being easy and flexible.

Chocolate Brittle Surprise

Wow, these were surprisingly great. And they are so versatile. I made some with white chocolate and almonds and put a little cinnamon in the butter sugar mixture. The were delicious as x-mas treats

Rich Chocolate Frosting

Fantastic frosting. I also halved the recipe to cover a double layer 9in round cake. I accidentally used the 1/3 measuring cup instead of the 1/4 when measuring out the coco powder (so I basically used 1-2/3 cups instead of 1-1/4), and honestly it was still great. I think I'll keep it that way the next time I make it.

Coconut Macaroon Brownies

Pretty good. A little too sweet for my taste, but everyone else loved them. Mine didn't cut like pictured either. The center kinda integrated with everything else in a sticky sweet goo (a delicious goo according to my friends), so presentation was rough. Still good, will make again.

Delicious. I made these exactly as directed (and tried a batch with apricot jam also great and easier to stick the filling to the dough) and they were fantastic. Mine left a fairly large grease slick on the bottom of the cookie sheet, so I had to remove them right away to cool on wire racks. I think I didn't get the butter and cream cheese cut small enough before adding the other ingredients. Didn't effect the flavor or presentation though.

I've made these about a dozen times and I love them. I do fiddle with the recipe (I add vanilla and a pinch of salt), but they deserve a perfect score just for being a great starting point for a simple cookie.

Slow Cooker Carnitas

These were so great. I add black pepper to the seasoning mix, but they are great as it. I also didn't have 10 hours to cook, so I put them in the slow cooker on high for 5 hours instead. Shredded perfectly and tasted moist and delicious.
