White Bean Chicken Chili

This chili is delicious! I had to substitute a few items I didn't have (Campbell's Creamy Chicken soup for broth, extra canned tomatoes with chilies for the tomatillos, and extra cumin for the coriander), but it still turned out great. It was nice and spicy, which was perfect for a cool night. The only downside I found was it took closer to 90 minutes to prepare rather than the 35 minutes estimated. Part of this was because the recipe doesn't account for the time it takes to cook the chicken. Regardless, I will definitely prepare this chili again. Also, I froze about half of the chili in a GladWare container. I was amazed at how well it froze and defrosted. It tasted as good from the freezer as it did when I first prepared it.

Bacon Gravy for Biscuits

I loved this gravy! I hadn't thought about putting the grease into other gravies I'd made, but the grease definitely made the difference with this one. I will definitely make this recipe again!

Tangy Grilled Pork Tenderloin

This recipe is an instant favorite! I am not a pork person, but we found a tenderloin that was really cheap. So, we decided to look for a recipe that looked good. This is so simple, yet so delicious! I didn't have a regular grill, so I used my George Foreman Grill. I'm glad I did, because the searing you get on a grill really enhances the marinade.

Easy Mexican Casserole

This was a very easy recipe to make, and it was very open to adaptation. I did not have green onions, so I substituted red and white onions. I did not have tortilla chips, but I had plenty of corn tortillas, and I just made my own. In addition to layering them on the bottom, I also topped the casserole with extra crushed chips after cooking. This really helped because the chips at the bottom of the casserole got soggy. Canned tomatoes (I used some with chiles mixed in) work great in place of the fresh tomatoes. It only took about 10 minutes to cook, as opposed to the 30 stated in the recipe. This recipe became an instant favorite in our household. We will definitely make this casserole again!
