Fluffy Pancakes

this was a simple and great recipe for pancakes. i added about 2 tablespoons of Pure Vanilla Extract and about tablespoon of cinnamon, but other than that the recipe was followed. Also i substituted a tablespoon of lemon for the vinegar for the curdling. i would HIGHLY advise following the medium heat or they will burn. Also make the first and second pancakes small to test out the heat, and while edible, the first ones don't come out nearly as well as later pancakes.

Chewy Chocolate Chip Oatmeal Cookies

Excellent recipe. i modified slightly by using a muffin tin (non-stick). i put a thin layer of cookie dough, then put a FunSize Hershey bar down, then covered with thin layer of cookie dough. it filled each muffin mold about 1/2-3/4, don't put too much in. They stay chewy and EVERY bite has chocolate. plus it is easier to mix without the chips. i probably increased the vanilla by a touch, i like vanilla.

Easy Meatloaf

My wife loved it. i messed up and mixed all the wet ingredients then folded in the meat, bread crumbs, etc. I did not realize the ketchup (i used spaghetti sauce) and mustard were for the glaze, oops! but it still tasted great and no harm no foul. i only baked for about 30-35 minutes because i modified the recipe by putting the meatloaf into a muffin pan. it made 16 meatloaf muffins and they are easier to handle and portion out. ensure you butter (or spray) the pan beforehand for easier removal. i'll be making this again soon. it is going into the rotation.

Pizza Crust for Bread Machine

very simple to make, very common ingredients except perhaps selmolina. i don't know what it is but my wife, who is German, always has Griess around so it worked out. i also added Garlic Powder, Onion Powder, Thyme, Oregano, and freshly ground Black Pepper to the flour so the flavors are built into the crust. also i split the dough into two pieces to make two thinner pizzas vs. one larger one and the smaller pizzas aren't THAT small OR thin. one trick i did was bake the crusts (alone) for about 1.5 - 2 minutes each side before applying sauce and toppings. AND ensure you flour your surfaces well when working the dough or you will end up with a very UGLY (but tasty) pizza blob. the first pancake is always the worst and i've learned my lesson well. ENJOY!!

Grandmother's Buttermilk Cornbread

Excellent recipe. i substituted brown sugar for white sugar and used corn flour vs corn meal for a smoother texture. but it came out very good. the true test is when i take it to the office picnic tomorrow... 11/27/2014 - tried it with the cornmeal and it was great, i still used the brown sugar though. and i used a muffin tin instead of a pan, so for that it took about 15 minutes a pan. check on the brownness and use a toothpick to test doneness. i'd still give it 5 stars because i don't know of "Southern cornbread" i'm from Maryland, if it tastes good, i'll eat it.

Easy Guacamole

Simple guacamole, this was the second time I've made it and it was very good. I will use the Hass avocados in future, although the regular green were fine, the Hass are IMHO better.

Restaurant-Style Taco Meat Seasoning

This turned out great, first time making taco seasoning from scratch and it was tasty. No more store bought for me, takes a few extra minutes vs opening a package but you know what ingredients are in there, and they're common ingredients!

Hearty Caesar Salad

Apple Turnovers

should have used an egg wash, but they sealed up just fine. i did NOT soak in water and lemon juice. i used 3 Granny Smith and 2 Fuji's and it came out fine, also cooked about 4 minutes. next time i will just try with a bunch of apples and see if it makes a difference. no glaze either, they were fine plain and perhaps could have used some powdered sugar but other than that quite perfect for the first time out of the box. one other tip, if your wife wants a second one, DON'T hide them, and give it to her or she won't talk to you for the rest of the night.

Banana Bran Muffins

it was a very good recipe. i added an extra banana, but used less butter, flour and sugar. i substituted with a small Organic Applesauce (250 g, i think). and i used more Bran and Oatmeal to replace the flour so it was still a total of 2 cups. Very moist and tasty. and a bit healthier.

Tzatziki

while i did not use Vinegar, i used a little Lemon Juice, it came out fine. i added some McCormick's Hot Shot (mix of black and red pepper) and it was good. depending on HOW think you want it, let the yogurt drain longer. i had mine for two nights. TIP: to help draw water out of the cucumber, put some salt on it, not a lot, wait about 20-30 minutes then wring the cloth (containing shredded cuke) out. if you want your Tzaatziki smoother then you need to really puree your cuke. i like chunks in mine so the recipe is fine. also you can add dill or mint, i prefer a bit of dill. add to taste. just so you know if you think it tastes good now, the next day and after it will get a bit stronger sitting in the fridge. that is why i make a batch big enough for two or three dinners and the sauce keeps getting better.

Banana Bran Muffins

i modified slightly, only used all purpose for the flours, added 1 teaspoon Pure Vanilla Extract. substituted 1/2 cup applesauce (normally i use organic but i only had Blueberry Delight, didn't really affect taste) for the 1/2 cup oil. and since it would have gone to waste i put in an extra banana (close to 1/2 cup). only used Brown Sugar (1 cup). also added some chocolate chips. i baked for about 12-18 minutes depending on the size of your muffin pan (i used two different ones). this came out very well and will probably do apple cinnamon muffins soon.
