Grilled Salmon I

Reviewed: Apr. 19, 2013
For years I have avoided salmon.. I never cared for it in restaurants and couldn't get into the smoked version. So when my hubby requested that I add salmon to our menu rotation for health reasons, I came across this recipe and made a back-up dinner for myself in case I didn't like it. I ended up eating the whole fillet - and have made salmon several times since then! I used Elizabeth's advice and baked the fillets in foil packets - they turned out perfectly! My husband has requested I make this for our next dinner party! Thank you for a simple and delicious way to enjoy salmon!

Grandma McAndrews' Irish Soda Bread

Reviewed: Mar. 24, 2013
This tasted exactly like my Grandmother's recipe. I was looking for something authentic and so many other "soda breads" on this site were too sweet. This is perfect. The raisins add just enough sweetness and the bread is crumbly but not too dry. I made a double batch and baked two loaves in oiled metal cake pans. I think next time I will make multiple smaller loaves because it took so long for the inside to finish baking that all the raisins on the top were burnt. Only thing I did differently was used vegetable oil instead of corn oil, and used golden raisins (plumped them in hot water before adding). This is so yummy toasted with butter!! Thank you, Sheila, for a fantastic recipe! This will be made much more than once a year in our house!

Pumpkin Pancakes

Reviewed: Nov. 26, 2012
These were fantastic! I substituted 2 1/2 cups pancake mix but kept everything else the same (pumpkin, egg, milk, vinegar, oil and brown sugar). Also added about 1/4 tsp nutmeg. The whole family just gobbled these up - didn't even need syrup!

Shrimp Po' Boys

Reviewed: Jun. 24, 2012
This was SO tasty! We used fresh-from-the-boat shrimp but instead of Creole seasoning I used Old Bay.. Next time might use a bit more for flavor, but the sauce was fantastic! I held back on the cayenne for fear of too much heat, but will use a bit more next time. Couldn't find the Ponzu Lime, but squeezed in half a lime and added a dash of soy sauce. Yum! Thanks!

Chicken Jambalaya

Reviewed: Feb. 21, 2012
Awesome! I increased the amounts to feed the four of us plus have some leftovers, but otherwise followed the recipe (oh, used orange bell pepper instead of green). I used to use the Zatarains mix to make Jambalaya and stopped because it was too salty - this was perfect! everyone went back for seconds! Thanks!

Too Much Chocolate Cake

Reviewed: Dec. 27, 2011
this was so tasty! We made it for Christmas, since the girls wanted to make Jesus a Birthday cake... The cake mix I had was only 15.25 ounces and I had a cook n serve package of pudding (vs the "instant"). I had to add some flour to the batter until it seemed to be the right consistency (not sure how much I added, maybe 1/4 - 1/2 cup... plus had all ten fingers crossed!). Used dark and mint chocolate chips (the little green spots can look unappetizing if you are uninformed!) and Duncan Hines Amazing Glazes.. topped with a sprinkling of powdered sugar... Oh. My. Gosh. This was chocolate heaven!
