Grilled Salmon I
For years I have avoided salmon.. I never cared for it in restaurants and couldn't get into the smoked version. So when my hubby requested that I add salmon to our menu rotation for health reasons, I came across this recipe and made a back-up dinner for myself in case I didn't like it. I ended up eating the whole fillet - and have made salmon several times since then! I used Elizabeth's advice and baked the fillets in foil packets - they turned out perfectly! My husband has requested I make this for our next dinner party! Thank you for a simple and delicious way to enjoy salmon!

Grandma McAndrews' Irish Soda Bread
This tasted exactly like my Grandmother's recipe. I was looking for something authentic and so many other "soda breads" on this site were too sweet. This is perfect. The raisins add just enough sweetness and the bread is crumbly but not too dry. I made a double batch and baked two loaves in oiled metal cake pans. I think next time I will make multiple smaller loaves because it took so long for the inside to finish baking that all the raisins on the top were burnt. Only thing I did differently was used vegetable oil instead of corn oil, and used golden raisins (plumped them in hot water before adding). This is so yummy toasted with butter!! Thank you, Sheila, for a fantastic recipe! This will be made much more than once a year in our house!

Pumpkin Pancakes
These were fantastic! I substituted 2 1/2 cups pancake mix but kept everything else the same (pumpkin, egg, milk, vinegar, oil and brown sugar). Also added about 1/4 tsp nutmeg. The whole family just gobbled these up - didn't even need syrup!
