I don't normally change a recipe the first time I try it, but tonight I had to. I chose to use black beans instead of kidney, and since I was out of chili powder, I used spicy adobo chili powder. My husband had recently smoked a pork shoulder, and we had already shredded it for barbeque. So I added some of the pork to them, and assembled them like enchiladas. I had some bean mixture left over, so I added water and poured that over the enchiladas. Baked at 350 for 30 minutes, served with sour cream and avocado slices. Delicious!!
