Quick and Easy Alfredo Sauce

I thought this sauce was MUCH more flavorful than the jar stuff I used to buy. I only used 1 1/2 C of milk per other reviews, and I still thought it was pretty thin on the stovetop. Since my husband ended up working late that day, however, I finished it off in the oven and it ended up a little dry. I think it I were to BAKE it again, I'd use all the recommended milk, but will eyeball it if I make it on the stovetop. It was wonderful flavor though; the butter and garlic were melt in my mouth good!

Slow Cooker Beef Stroganoff I

I LOVE slow cooker recipes; after working all day, the last thing I want to do is go home and spend a long time cooking a meal... This recipe is IDEAL for when I want some good home cooking without the time commitment. It was easy to make and a nice change to our usual weekday supper routine. I served over noodles because my husband prefers that to rice, but I think either way would work very well.

Easy Mexican Casserole

This recipe didn't WOW my husband too much, but it definitely hit the spot for me. Essentially, I think it came out tasting like a loaded nacho, which was kind of what I was craving the night I made it. I will definitely keep this around for those nights I'm in the mood for Mexican, but don't want to spend too long in the kitchen. The only thing I did differently was I added shredded lettuce to the top of each piece as it was served.

Cookie Balls

The kids who visited our house ate them up in a heartbeat, but they were way too sweet for my personal taste. I'm thinking I'll try them again around the holidays and experiment a bit with one of the batches using different kinds of cookies...

World's Best Lasagna

The first time I tried this, I let it simmer a LONG time like another reviewer had suggested, but this did NOT work for me; just made the sauce overthick from the liquid condensing down and didn't like the concentrated flavor. The second time I made it, I let it simmer the amount of time suggested in the original recipe and it was much better. We served it at our Italian style Thanksgiving last year and it went over well. I LOVE using mozzarella SLICES between the layers to bind them together better (why had I been using shredded my whole life?); the last time I made it for just my husband and me, I alternated the layers of cheese using mozzarella and pepperjack slices to give it some extra kick, and we really liked how it turned out.

Delicious Ham and Potato Soup

Super easy and SO delicious! Added carrots the first time I made it, and I think I'll crisp up some bacon to add in at the end the next time I make it. Read in at least one review the soup wasn't as thick as they liked, so I added a couple extra tablespoons of flour as I was whisking together the thickening mixture and it came out perfectly, in my opinion.

Garlic Mashed Potatoes Secret Recipe

Tried 04/12/2011 - My husband is not a big fan of garlic, so I erred a little bit in trying to make this recipe to his liking... Rather than using fresh garlic, I used garlic powder (and way too much of it for the reduced amount of potatoes I used). I just read that when subsituting garlic powder for cloves, to use 1/8 t. per clove (why I didn't look into that BEFORE tossing in a full t. is beyond me). So mine came out with a very strong garlic flavor. I personally still liked them, but my husband was NOT a fan. I'll try them again in the future, but if I use garlic powder again, I'll cut back on it for a more subtle flavor. I also seemed to have trouble with the consistency; normally I have no trouble whipping my potatoes with an electric mixer, so I'm not sure if my potatoes were a little too firm yet, or if the recipe just needed more "wet" ingredients. I ended up adding extra butter, a little milk, and even some sour cream to get them to the conistency we like.

Mouth-Watering Stuffed Mushrooms

Tried 0412/2011 - We loved them. I only minced one clove of garlic, so I'm sure I didn't use a full teaspoon (my husband is not a big garlic fan), and while I thought they were great, the full 1/4 t. of cayenne pepper did make them seem pretty hot. I would use the same amount again for us, but be aware of it if you're family doesn't like too much heat. We actually had a few left over and I was worried they might not fare very well getting nuked in the microwave for today's lunch, but I thought they were fine (not quite as good as last night, but MUCH better than I was anticipating).

Stuffed and Wrapped Chicken Breast

Tried 04/05/2011 - Used the reviewer recommendation of flattening out the chicken and using Chives & Onion Cream Cheese (cutting out the peppers and onions). I also omitted the garlic power, but only by accident! I added bacon bits to the cream cheese mixture and secured the chicken breasts with 3 strips of bacon each, which was too much, will cut back to 2 next time. I also meant to broil the chicken for the last few minutes in the oven, but forgot; will try that next time to crisp the bacon up. My husband, who is NOT a fan of chicken, really liked it! Served it with wild rice and fresh sauteed mushrooms; will make again.
