Chicken Tortilla Soup

I altered this recipe to be slow cooker friendly. I added everything to the slow cooker, including the cornstarch and 1/4 cup water, whisked it around and added frozen chicken breasts. I allowed the slow cooker to cook on LOW for6-9 hours. Took out the cooked chicken and shredded it with a fork, returned it to the crockpot. Served with recommended toppings. A winner!

T Bird's Beef Jerky

I used this recipe with venison and it was very good. Will try it with elk, next. I also used a food dehydrator instead of an oven.

Harvest Rice Dish

This is another reicpe that I use frequently. I don't like the onion wedges in this though. I make the recipe just as written except that I sliver the onion wedges so that the onion is in short thin strips. This reduces the cooking time for the onions (20 minutes) considerably since more surface area of the onions are exposed. I also toast the almonds before using them. PLace the almond slivers on a baking sheet and pop into a preheated 350*F oven. Eacth them closely, they will burn if not tended to. Stir the almonds frequently til light brown. The toasted almonds make the dish taste deeper and nuttier.

Gourmet Sweet Potato Classic

This is a great recipe but I have changed it to suit our tastes. I omit the cream and flour. I add 2 heaping tablespoons of orange juice concentrate and replace the white sugar with brown sugar for a deeper, richer taste.

Awesome Sausage, Apple and Cranberry Stuffing

This is the third year that I have used this stuffing recipe. I use Jimmy Dean Maple Sausage instead of turkey sausage. Remember that ingredients have varying amounts of moisture in thema nd you may need to add a little more or less turkey stock (or chicken broth) to make the consistancy of the stuffing just like your family likes it.

Asparagus Salad

I used the juice of the asparagus in place of some of the water instead of discarding it. This is a lite, delicious recipe. It's not just for summer, but makes a tasty and pretty holiday side dish.
