Almond Biscotti

I was going to give this a horrible rating because the "dough" was practically batter. I added a little more flour and hoped for the best, but they didn't hold shape. I was able to salvage them and the taste is pretty great, if a little lighter than biscotti should be. I added a little almond extract and dipped the bottoms of the finished product in dark chocolate. They will do. True almond biscotti shouldn't have butter, I have now learned.

SO Delicious! I made this quickly last night on a whim to serve with a chickpea tikka masala. I usually buy naan at the grocery store, but didn't this time. Since it was just for the two of us, I halved the recipe. I used fresh garlic from my own garden and it was fabulous. I cooked the naan on a George Foreman style Swedish grill and it was perfect. I didn't really "pull" the dough as much in the first couple of pieces, but by #3, it was chewy, crispy goodness. It was so much better than the store bought variety. It tasted like and was the consistency of what is served in authentic Indian restaurants. We had it for dinner and again with lunch today and can't wait to make it again!

I used vegetable stock in place of the chicken and just a little cream and subbed the rest with lowfat milk. It was still fantastic! I think it's better cold than hot.

Oatmeal Waffles

WONDERFUL! I made these yesterday in our thin waffle iron. I served them with applesauce instead of syrup and they were a big hit. I also used oatmeal with extra added fiber, so they are better for you. We had them again this morning. The better half asked me to make a double batch to keep in the freezer to take to work. They are SO filling. This is a keeper.
