The muffins stuck to the paper wrappers, so I recommend spraying the pan instead. I altered the recipe to make it even more healthy by using applesauce instead of the oil, using just one-half cup sugar, substiting whole wheat flour for one-third of the regular flour, and adding three tablespoons of gluten flour to help the muffins be fluffy. I found that I liked the spices to be a little milder, so I used half as much nutmeg and cloves.
These muffins are really easy to make, healthy, and delicious!
