Manicotti Alla Romana
I'm surprised that so many people are rating this dish so highly. The flavors seemed pretty bland to me. The filling seemed like it was really missing something (perhaps adding some Italian sausage would help). And a rich, creamy white sauce should taste so delicious that it is tempting to dip your finger in and eat it all by itself -- but this white sauce was just odd -- salty, chicken flavored, not well rounded. My family did eat the manicotti, but without too much enthusiasm, saying, "It's o.k." Considering how much time it took to make this dish, it would need to elicit a "Mmmmm...this is so good!!!" response for me to bother making it again. (I got that response instead from the World's Best Lasagna recipe, which has amazingly deep and satisfying flavors).

Pumpkin Chocolate Chip Muffins
This combination is surprisingly tasty. Go ahead and double the recipe, because they will disappear quickly! The muffins stuck to the paper wrappers, so I recommend spraying the pan instead. I altered the recipe to make it even more healthy by using applesauce instead of the oil, using just one-half cup sugar, substiting whole wheat flour for one-third of the regular flour, and adding three tablespoons of gluten flour to help the muffins be fluffy. I found that I liked the spices to be a little milder, so I used half as much nutmeg and cloves. These muffins are really easy to make, healthy, and delicious!

Pumpkin Loaf
I've made this pumpkin bread dozens of times and my whole family loves it. I like to make it extra healthy by reducing the amount of sugar by 1/2 cup, substituting 1/2 cup whole wheat flour for some of the white flour, and adding a couple tablespoons gluten flour (which makes the bread lighter and fluffier). These sell especially well in my house when I make them as muffins. I made my healthy version as mini-muffins for snack at my sons pre-school and the kids gobbled them up! Thank you for this unique recipe!
