Cathie's Clam Chowder

Tasty but wasn't quite thick enough. Probably needs more flour for a thicker roux. I added potatoes, which is a nice addition to chowder.

Swordfish a la Siciliana

I'm not a big fan of tomato based sauces or Italian food, but this was really good. Baking the sauce on top of the swordfish makes it extra tender. The capers and olives are yummy. I also added a couple anchovies which adds to the complexity of flavor. I have also grilled the swordfish and then topped it with the mixture. Thumbs up!

Mocha Ricotta Creme

This was horrible. I made this recipe as suggested from the South Beach Diet book, where it raves you can have dessert. Don't even waste your time having this "dessert", it has the consistency of sand, and the taste is really awful. I even tried to put it in the food processor to make it more smooth, but it didn't do a thing. I even got a second opinion. My boyfriend could barely swallow the first and only bite. If you're going to have dessert, just go for a REAL dessert.

Awesome Crab Soup

Boudreaux's Zydeco Stomp Gumbo

This was really good, but it was too salty. I used Zatarain's creole seasoning which I will use less of next time or add more water. I would definitely use a better sausage than pork links next time. I would suggest andouille. It makes a whole lot, so I may half the recipe next time. My freezer is overloaded with leftovers!

Poblano Chile Pepper Soup

This recipe was waaaaayyy to HOT! I mean painful to eat...and I love spicy foods. I even used 5 peppers (the recipe calls for 6). The taste was very nice however, so I think if I make it again I would remove all the seeds which are what give it the zing. It was a little too chunky so I strained it and added some cream which created a very smooth and creamy soup.

Caramelized Baked Chicken

I found that using chicken wings, the chicken was really fatty. The sauce never carmeiolzed enough even after keeping it in the oven for over the time indicated on the recipe.

Monkey Bread I

My grandmother used to make this for me when I was a kid. I thought it would be really complicated to make, but quickly found out it was very easy. Loved it as a kid and still love it today.
