Pork Medallions

Made this for dinner tonight, and it was yummy. Couple of minor changes, because I used what I had on hand. When you live 17 miles from the closest grocery store, you don't go to the store for savory, so I used thyme instead. Instead of opening a can of chicken broth, I used chicken broth granules dissolved in water. Also used a can of portabello mushrooms instead of fresh. Gotta tell you it was really good, and the Knight gobbled it up like he had dragons to slay tonight. I served this with homegrown green beans, cabbage, homemade whole wheat rolls, and lots of sweet tea to wash it down. Very tasty indeed.

Absolutely the BEST Rich and Creamy Blue Cheese Dressing Ever!

My husband liked this dressing, but I did not. I thought it was way too strong, even after I added some additional buttermilk to tone it down. Perhaps it was the brand of blue cheese that I used. It was easy to prepare, however, and my husband ate it all up.

Mom's Warm Milk

Ok this DOES taste really good, but I am rolling in the floor laughing my head off. Of course it makes the little darlings sleepy....vanilla extract is 35% alcohol!! I make my own vanilla extract at home, and all it is is vanilla beans and vodka. They use pure grain alcohol for commercial vanilla. Thanks for the laugh...and the drink!!!!

Apple-Cinnamon Oatmeal Mix

I am always looking for "complete" mixes for my home food storage that only require the addition of water. Since I already had several boxes of quick oatmeal, dry milk powder, and home-dried apples, it was very easy to throw a batch of this together as a trial. The taste is good, it is filling, and the recipe lends itself to numerous variations. I will be making a large batch of this to package for long term storage.

Old Fashioned Pineapple Upside-Down Cake

Made this for dessert tonight, and thoroughly enjoyed it. The recipe sounded a little dry, so I took the advice of others, and added 1/2 C pineapple juice and 2 big dollops of sour cream (vanilla or plain yogurt would work too). Only one piece is left, so I'm gonna hide it for tomorrow!!

Swiss Steak Quick and Easy

I made this last night for dinner, and used venison cube steak instead of beef. I also used canned mushrooms (all I had). Cooked it in the slower cooker and served it over brown rice. Very tasty and very filling. Since I used venison, it was very low fat also.

Beef Pot Pie I

I was looking for a recipe to use up some left over roast, and found this one. I only made minor modifications. I added an extra 1/2 Cup of beef broth with corn starch added in to make more gravy. I also used a double pie crust rather than the puff pastry....just personal preference. I only simmered the vegetables for 20 minutes...they were done by then, and then I added my left over roast which didn't need to be cooked. I started it out on 375 degrees and cooked it for 20 minutes, and then cut the heat down to 350 for about 20 minutes (didn't really keep track). It made a BEAUTIFUL pie (should have taken a picture!!). My husband ate seconds, and said he really enjoyed it. I thought the wine gave it a good flavor. Will definitely use this recipe again. Thanks!!!

Jo's Rosemary Bread

My, my! This was so good! I served it with olive oil and balsamic vinegar, with fresh ground black pepper and fresh ground Italian seasonings. We didn't eat it all the first night, so I heated the remainder in foil in the oven for about 15 minutes, and it was still very good. I saw some ratings that said their's didn't turn brown, but mine came out golden brown. I used bread flour instead of all-purpose flour.

Sweet Dinner Rolls

Oh my! I was so shocked at how good these were!!! I made these rolls last night for the first time, and they were a huge hit with the family! I used the recipe exactly as written, except I used bread flour rather than all-purpose flour. It made a beautiful, soft dough in my bread machine...not sticky at all. And the rolls were light and so soft. My husband ate 4, and then complained about eating too much. I love to make homemade rolls, and this recipe has been added to my list of favorites. Thanks so much!!!

Black Bean and Salsa Soup

What an easy, healthy recipe! It's loaded with fiber and protein, and no fat (if you leave off the sour cream...which I didn't). I've fixed this soup twice recently, and my husband and I both love it. It's quite possibly the easiest soup recipe I've ever made. I reserved 1 can of the beans to add whole, but didn't change anything else. I served it with crab quesadillas and salad for a quick dinner. This recipe went into my "favorites" recipe book. Thanks!

Cinnamon Rolls II

Once again, I made these cinnamon rolls for Christmas morning. In fact, I was TOLD that I HAD to make them. The dough turned out a little wet this year...not sure why. Although they weren't beautiful, they sure did taste good, and the family scarfed them down. The recipe is too big for my bread machine, but I just watch it during the rising process, and take it out when it gets too high. My family is hooked on these, and I spend every Christmas Eve making them. Thanks for a really good recipe!
