Honey Wheat Sandwich Rolls

I'm SOOOO glad I found this recipe!! I made the dough today right by the recipe and it was very easy and very yummy. I made 2 sizes...sandwich buns and dinner rolls. We'll have hamburgers tonight and dinner rolls tomorrow night. As another reviewer suggested, I used the ring of a wide-mouth Mason jar to cut out the hamburger rolls. I just pinched off equal sized pieces of the remaining dough to form the dinner rolls. I don't think you need to roll the dough to 3/4" thick for the buns, however. I rolled it less than 1/2" thick, and the rolls are just the right size. I have a large family, and it's expensive when we all get together for cookouts. Making homemade rolls is a delicious cost-saver. Thank you SEEFREE for a delicious recipe that I will use often!

Holiday Cranberry Sauce

I used this recipe this Thanksgiving, and it was a big hit! I substituted orange juice for the water, and cut the sugar to 1 1/2 C. I also doubled the recipe so I'd have some leftovers. I put some of the leftovers in jars in the freezer to serve later with ham or sausage, and kept the rest to put on bagels with cream cheese for breakfast. The texture is very similar to cranberry preserves...not completely gelled like the canned version. I really enjoyed it.

Spinach Quiche

Loved the recipe, EXCEPT the idea of the 1/2 C of butter. Instead, I used about 1 1/2 T of olive oil....it was plenty to sauté the veggies, and the quiche was not oily at all. I also used fresh mushrooms instead of canned, and I sauted them along with the garlic and onion. I also pre-baked my pie crust for 7 minutes to make sure it got nice and crisp. Minor changes, but they make a big difference in the outcome. Because my husband isn't crazy about Feta, I cut that in half. This is delicious....I just finished a piece for lunch, and I wish I had some more!!

Meatball Sandwich

From the positive comments, I knew this was a good recipe, so I decided to make enough meatballs to freeze. I used 3 lbs of hamburger and 1 lb of mild Italian sausage. I then quadrupled the other ingredients for the meatball mixture, then cooked 12 of them (30 minutes, not 20) and put the others on a waxpaper-lined baking tray in the freezer. After 2 hours, I took the frozen meatballs out and packaged them 12 to a package using my handy-dandy Food Saver (freezer bags would work fine). Now I have 3 more dinners worth of meatballs for sandwiches or spaghetti. Some comments said they added salt to this recipe. I'm a salt lover, and I didn't think it needed additional salt. I have always bought frozen meatballs in the past, but I'll be making my own from now on....these are so easy and taste so much better!! Thanks for a really good recipe!!

Apple Crisp II

Made this the other day and we loved it. I've never put water in apple crisp, so I left it out. I added 1/4 tsp nutmeg. Served warm with vanilla ice cream. My teenaged grandson asked for seconds. I didn't measure the apples....I just used 5 large Granny Smiths, and that was plenty for a 9X13 pan. Thanks for an easy recipe that tastes yummy!

Mom's Mashed Potato Salad

This is the recipe I've been looking for. I wanted a potato salad recipe that was simple, but tasty, and one that resembles my mother's. She got Alzheimers and never wrote down her recipe. This is the closest recipe I've ever found to what she used to make. Thank you so much!!

Chocolate Cream Pie II

Did not set - after 35 minutes of constant stirring. If I try this again, I'll increase the cornstarch to 4 tablespoons. I ended up with delicious pudding.

Absolute Mexican Cornbread

My granddaughter is married to a Latin gentleman who loves authentic Mexican food; he raves about this recipe. Every time we have a family gathering, he asks me to make this cornbread, and, if there are leftovers, he always takes them home with him. I felt that 1 cup of butter was unnecessary, so I cut it in half, and the bread is still tender and moist. I generally use the Kraft Mexican Cheddar Jack shredded cheese so I don't have to buy two different cheeses, but any blend of Mexican cheese works equally well as a replacement for the Cheddar and Monterey Jack. This recipe made it into my "lifetime favorites" recipe book, because it is so popular with my family.

Pork Medallions

Made this for dinner tonight, and it was yummy. Couple of minor changes, because I used what I had on hand. When you live 17 miles from the closest grocery store, you don't go to the store for savory, so I used thyme instead. Instead of opening a can of chicken broth, I used chicken broth granules dissolved in water. Also used a can of portabello mushrooms instead of fresh. Gotta tell you it was really good, and the Knight gobbled it up like he had dragons to slay tonight. I served this with homegrown green beans, cabbage, homemade whole wheat rolls, and lots of sweet tea to wash it down. Very tasty indeed.

Absolutely the BEST Rich and Creamy Blue Cheese Dressing Ever!

My husband liked this dressing, but I did not. I thought it was way too strong, even after I added some additional buttermilk to tone it down. Perhaps it was the brand of blue cheese that I used. It was easy to prepare, however, and my husband ate it all up.

Mom's Warm Milk

Ok this DOES taste really good, but I am rolling in the floor laughing my head off. Of course it makes the little darlings sleepy....vanilla extract is 35% alcohol!! I make my own vanilla extract at home, and all it is is vanilla beans and vodka. They use pure grain alcohol for commercial vanilla. Thanks for the laugh...and the drink!!!!

Apple-Cinnamon Oatmeal Mix

I am always looking for "complete" mixes for my home food storage that only require the addition of water. Since I already had several boxes of quick oatmeal, dry milk powder, and home-dried apples, it was very easy to throw a batch of this together as a trial. The taste is good, it is filling, and the recipe lends itself to numerous variations. I will be making a large batch of this to package for long term storage.

Old Fashioned Pineapple Upside-Down Cake

Made this for dessert tonight, and thoroughly enjoyed it. The recipe sounded a little dry, so I took the advice of others, and added 1/2 C pineapple juice and 2 big dollops of sour cream (vanilla or plain yogurt would work too). Only one piece is left, so I'm gonna hide it for tomorrow!!

Swiss Steak Quick and Easy

I made this last night for dinner, and used venison cube steak instead of beef. I also used canned mushrooms (all I had). Cooked it in the slower cooker and served it over brown rice. Very tasty and very filling. Since I used venison, it was very low fat also.

Beef Pot Pie I

I was looking for a recipe to use up some left over roast, and found this one. I only made minor modifications. I added an extra 1/2 Cup of beef broth with corn starch added in to make more gravy. I also used a double pie crust rather than the puff pastry....just personal preference. I only simmered the vegetables for 20 minutes...they were done by then, and then I added my left over roast which didn't need to be cooked. I started it out on 375 degrees and cooked it for 20 minutes, and then cut the heat down to 350 for about 20 minutes (didn't really keep track). It made a BEAUTIFUL pie (should have taken a picture!!). My husband ate seconds, and said he really enjoyed it. I thought the wine gave it a good flavor. Will definitely use this recipe again. Thanks!!!

Jo's Rosemary Bread

My, my! This was so good! I served it with olive oil and balsamic vinegar, with fresh ground black pepper and fresh ground Italian seasonings. We didn't eat it all the first night, so I heated the remainder in foil in the oven for about 15 minutes, and it was still very good. I saw some ratings that said their's didn't turn brown, but mine came out golden brown. I used bread flour instead of all-purpose flour.

Sweet Dinner Rolls

Oh my! I was so shocked at how good these were!!! I made these rolls last night for the first time, and they were a huge hit with the family! I used the recipe exactly as written, except I used bread flour rather than all-purpose flour. It made a beautiful, soft dough in my bread machine...not sticky at all. And the rolls were light and so soft. My husband ate 4, and then complained about eating too much. I love to make homemade rolls, and this recipe has been added to my list of favorites. Thanks so much!!!

Black Bean and Salsa Soup

What an easy, healthy recipe! It's loaded with fiber and protein, and no fat (if you leave off the sour cream...which I didn't). I've fixed this soup twice recently, and my husband and I both love it. It's quite possibly the easiest soup recipe I've ever made. I reserved 1 can of the beans to add whole, but didn't change anything else. I served it with crab quesadillas and salad for a quick dinner. This recipe went into my "favorites" recipe book. Thanks!
