Carrot Cake III
I made this last night, in a bundt pan. A few changes, that made it better for our family, I added 1/2 cup grated fresh ginger, 1 cup of raisins, 1 t. Cardammon, 1/2 t. Allspice. Used one cup sugar, 1/2 cup brown sugar splenda, juice of one blood orange. less oil, for frosting I used 1 1/2 cup powered sugar, 1 stick of butter, 1 pack cream cheese.
I wanted a more spice cake with carrots...this worked great for me.
