Chocolate Eclair Cake

I made this twice now, the first time exactly as stated, the second with some of the suggestions. Both were excellent and loved by my kids. I used honey grahams the second time as I am not a big fan of the chocolate ones. Also added a tbsp on vanilla extract to the pudding and substituted a can of condensed milk for some of the regular milk. These two additions help make the pudding taste more home made I think. Would love a holiday version- peppermint filling would go lovely with the chocolate grahams.

Cucumber Salsa

This is good with Mexican fare- but its outstanding with roasted lamb or any other roasted meat. Chopping the cucumbers really fine will allow you to use it as a spread on rolls (great with grilled chicken). Chop the cukes extra large and its a great dip (especially with toasted pita wedges-my favorite). Great recipe!

Asiago Dip with Crostini

This really really good, especially with toasted pita wedges. The second time I made it, I added some red pepper flakes and it was even better. Good the next day should you have any left over. (But don't count on it!)

Light & Easy Chicken Parmesan

This is a great basic recipe, which i altered a bit. I use a 16 oz tub of sour cream and mixed it with 1 cup of fancy shredded parmesan. I cooked up a batch of egg noodles and mixed it with the sour cream mixture and cubed cooked chicken. Popped it in the oven for 30 minutes on 300 degrees and it was fantastic.

Cranberry Chutney I

The best cranberry sauce/chutney ever. I omitted the raisins (don't care for raisins) and it was a hit. Great served either cold or hot with turkey and even chicken. Super easy to put together and more flavorful than store bought.

Watermelon Fire and Ice Salsa

This is a great recipe! The combo is a little strange and I just had to try it. The watermelon is a great filler because it essentially has little taste and adds a nice clean and refreshing note to the peppers and spices. I also added more jalepeno and garlic salt, but adjust to your taste. Very good with taco chips. All the skeptics in my family loved it.
