Absolutely the Best Chocolate Chip Cookies

I loved these! I was out of butter and looking for a good cookie recipe that I was planning to substitute shortening for and then I found this one that doesn't use butter anyway. I didn't have Mexican vanilla, so I had to use regular and I used a little less chocolate chips just because it's what I had left and I like a little less. I halved the recipe and baked them on parchment paper and they turned out lovely and delicious. I did have to bake them longer than suggested - about 13 mins.

Aunt Connie's Coconut Cake

This cake was delicious! Not overly sweet and a wonderful coconut flavor throughout. The cake batter itself was addicting! It made a perfect Easter cake, which I brought to my family gathering and everyone loved it. I had to bake it about 20 minutes longer because the batter was still gooey inside after the 90 minutes. The only actual problem I had was that my cake stuck to the pan and so the outer crust didn't look very pretty when I got it out. I just completely covered it with frosting and no one new the difference, but I think the recipe needs to include flouring the bundt pan. I'm assuming that was my problem since I didn't do that. I'll keep this recipe for the future and I've already passed it onto my mom.

Braised Italian Sausage Stew

So flavorful! I love that this is loaded with veggies! I had gotten mushrooms, parsnips, swiss chard, and onions in a produce delivery and had carrots and celery on hand so I was looking for a recipe to use as much of the produce that I could. This turned out perfect. It's definitely going into my "make again" pile.

Delicata Creamy Squash Soup

Delicious! I had a couple delicata squash that I wanted to use for dinner and this turned out to be a great recipe for it! I made a few substitutions due to what was on hand (half-and half instead of heavy cream and chicken broth instead of vegetable broth). I'll definitely want to make this again if I have delicata squash again.

Asian Pasta Salad with Beef, Broccoli and Bean Sprouts

I'm eating this right now. It's so good! I used whole wheat spaghetti noodles instead of penne because I think it mimics asian noodles more. I didn't have rice wine vinegar on hand so I used red wine vinegar and I can't notice the difference. I topped my salad off with a squirt of sriracha sauce - Yum!

Chocolate Chocolate Chip Cookies I

These hit the spot! Perfect for a chocolate craving. I halved the recipe and used slightly less sugar. I also goofed and used baking powder instead of baking soda, but they turned out lovely. I baked them on parchment paper so there were sticking issues. I'm definitely keeping this recipe for future use!

Whole Grain Breakfast Cookies

These turned out delicious, not overly sweet, and with a "healthy" granola-like taste. I had a hard time holding back from eating them. My only minor complaint would be that the dough is barely sticky enough to hold together so it became a bit messy using my hands to force balls of dough together. I would give it a 4.5 if I could, but the end result is still a yummy cookie. There were two ingredients I didn't have so I had to substitute the agave with honey and the dried cherries with cherry-flavored dried cranberries. However, I don't think it compromised the flavor. Also, I ended up with 33 cookies instead of 18, so I guess my heaping teaspoons were not heaping enough, but I like the petite size.

Teriyaki Pineapple Turkey Burgers

This was a flavorful way to eat a turkey burger! Yum! The only thing I would say is that I thought adding the pineapple juice to the sauce was unnecessary as it made it so runny and I preferred it thicker. I added more of the teriyaki sauce (without the pineapple juice) to the burgers after grilling. (I didn't use kikkoman brand sauce). I also added a slice of tomato with I thought gave it extra flavor and texture.

Moist Chocolate Muffins

I substituted the milk with espresso to bring out the chocolate flavor. Wow. Sooo good! I happened to only have mini chocolate chips on hand, and I really think it helped disperse the chocolate flavor. (The only reason I didn't give it a 5 star was because I didn't follow the original recipe exactly.)

Simple Whole Wheat Bread

We loved this! And it was fairly 'simple'...my first bread that I've made without my mom. I added some flax seed to it as well. I would like to add more grains next time...just to make it healthier and have a little more texture. The flavor itself is great though!

Slow Cooker Mole-Style Pulled Pork

Loved it! I did end up basically tripling the chili powder in it but other than that I followed the recipe and it turned out great! Since there's just two of us, I put a lot of it into the freezer to pull out for a quick dinner another night.

Irish Cream Truffle Fudge

Delicious! I didn't think this was too boozy, as some others had thought. I made it in a 9x13 pan and cut it into probably between 80 - 100 small pieces which were just as satisfying since it's so sweet. I will say that it was difficult to cut though.
