Roasted Brussels Sprouts

These turned out so bad! I think it is because I used frozen brussel sprouts, but the recipe doesn't indicate that fresh ones are necessary. All I know is that these came out horribly salty. Maybe it was because I used frozen and not fresh, I don't know. But I will not be using this recipe again.

Classic Peanut Butter Cookies

Didn't like these, I did everything the way the recipe said except I didn't have baking soda so I used more baking powder based on an exchange ratio I found on the internet. They were not very peanut-buttery. I'm definitely kicking this out of my recipe box.

Pear and Blueberry Cake

Delicious. I made this for my husband and I because my pears were gonna go bad, but I will definately make this if I ever have a bunch of my girlfriends over, it is the perfect coffee cake for company. The cinnamon-sugar topping is sooooo good.

Lemon Herb Grilled Chicken

Pretty delicious, and easy. I didn't have thyme, so I used a clove of garlic instead. It turned out great and was very moist. I will make this again for sure. I didn't have a grill, so I cooked it in a glass baking dish lined with foil (not sure if foil was necessary, I'm still new to this cooking thing) and it cooked all the way through 3 pieces of chicken in 25 minutes at 350 degrees. Good stuff!

Salmon and Spinach Fettuccine

Add garlic, and this recipe is delicious. Someone said to add sliced roasted almonds, so I tried it, but I did not like the addition of the almonds. It gave it a crunchy texture every now and then which I personally don't think goes with this recipe at all. I kept thinking it was a piece of fat or an undercooked noodle. My husband didn't mind it though. I actually used Costco's salmon burgers from the frozen food section, and it worked out really well. I did not add capers because I didn't have any, but I think it would have really added to the flavor. My favorite part of this recipe was the sun dried tomatoes. I didn't chop them up, and I added WAY more than 1/4 cup, because we LOVE them. I didn't have enough parmesan cheese, so I used a half cup shredded mozzerella cheese and it turned out fine--I think the mozzerella helped added to the creaminess of the sauce because I had used skim milk. One thing I should NOT have done is I used too much pasta (about 16 ounces). I should have doubled the whole recipe so it wasn't spread so thin. Last thing I changed was I used a whole bag of spinach instead of just one cup, because I like a lot of greens in our diet, and I think it helped to absorb and spread out the flavor more. I will definately make this again, because it was very tastey and very easy!

Nadine's Delicious Tilapia

Delicious--I was concerned that it would be bland, but the soy sauce was a surprisingly great ingredient--and I even used the reduced sodium kind. I am a new wife, and very sensitive to how my husband reacts to our meals, and he seemed to love this. I will definately make it again!
