I am a full-time single mom to two boys, 4 and 14. I work in the health field and have finally gotten the nerve to become formerly trained in Cullinary Arts. I begin the program in January.
My favorite things to cook
There are too many to list, but what I find I go to the most when I really want to relax and give my family a satisfying meal...Well, Soup of course!
My favorite family cooking traditions
My mother and I always prepare our holiday meals together for the whole family. We've done this since I was young, and now, it's almost like a dance. We move together and know what the next step is without even thinking about it. There is no one I would rather cook with, other than my boys who are begining to hold their own in the kitchen.
My cooking triumphs
My latest was creating an Orange Cream Cheesecake for my best friend. She loves this orange cream salad that our local deli sells and I created a cheesecake with all of the flavors for her. She loved it! And since, I have had friends make the recipe with the same results.
My cooking tragedies
I thought that since we could make beer can chickens...why couldn't I figure out a way to use 2 beer cans and cook a whole turkey breast I'd had in the freezer. I made a brine with fresh herbs and vegetables, soaked the turkey breast over night. I was so excited about my idea. After quite a bit of struggling, I was able to get the breast balanced over 2 beer cans side by side, place foil all around my grill as the turkey was too high for it to close. I grilled it with indirect heat, finally, when the meat thermometer said it was ready I was egar to enjoy my creation......Well, the turkey was so salty it was unedible, I threw away the wood chips (obviously before they were completely cool)and my garbage can started on fire. During the commotion,I burnt the pot of mashed potatoes as I had thought I'd turned the new electric stove off but instead had the pan of potatoes on high...ruining my pan and of course the mashed potatoes. Needless to say, we ordered pizza that night!

Chicken Cordon Bleu II
This was a great recipe! I made the following changes: Spread a thin layer of dijon mustard on chicken before placing the ham and cheese in it. I also dipped in egg wash and bread crumbs and baked. The sauce was absolutely amazing. I included a photo, of the breaded version with cream sauce! I will definately make this again!

Baked Apricot Chicken
This recipe was FANTASTIC!! I did, however, use orange marmalade as that's what I had on hand and browned the thighs first in a skillet. Next time, I think I will opt to remove the skin. My boys ate it up and asked for seconds! A keeper in our house!

Make-Ahead Spinach Manicotti
This is the first time I've posted a review and your's is review-worthy! Followed the recipe and it was WONDERFUL!! I made for parents when they visited and they were thrilled! I found I had extra filling so, I added mushroom stems, some bread crumbs and made stuffed mushrooms to go with dinner! Serve with a romaine salad with olives, red onions, bell peppers and Itallian dressing....an itallian meal to please all! Thanks for the recipe, I am making again on Wednesday night for my best friend and her children...I even added my own pic of your recipe, makes me hungry for it every time I look at it! (Added 12/10) I had to add to my last review, as I have made this yet again and dare I say it was even better!! I added fresh ground nutmeg to the cheese/spinach mixture before stuffing the shells. I LOVE this recipe! Stuffing the uncooked shells makes this sooo much easier!
