Slow-Cooker Chicken Tortilla Soup

LOVE THIS! I added some hot sauce to kick this up a bit (we eat a lot of Cajun dishes here). I even used hot enchilada sauce! I also added some leftover cooked brown rice and black beans, found I needed more chicken broth because the rice sucked up so much. Next time I make this I'm adding cayenne pepper, but otherwise it was a hit in my house!

Baked Omelet Pie

fantastic! I subbed zucchini for the potatoes, and made mine with all veggies (spinach, onion, bell peppers, halved grape tomatoes). I had so many veggies, I ended up needing 8 eggs (I also added a splash of milk as I wisked the eggs). the cast iron skillet in oven method was perfect! I let each person add cheese as needed rather than add to whole recipe.

Jalapeno Corn Bread

we can't get enough of this cornbread! it was perfect the way it was, but my preference is a little firmer (mine came out a little quiche like). I also wanted to make it slightly less caloricly dense... my tweaks: upped cornmeal to 1.5 cup, lowered corn oil to 1/3 cup, omitted cheese, used only 1tbsp butter in castiron pan. it's a hit with everyone who's tried it!

I used pecans instead of walnuts, white/wheat flour rather than all-purpose, applesauce rather than oil and cut sugar in half.
