Classic Bran Muffins

I tried these once with applesauce and didn't care too much for them. Tried again this morning and only changed raisins for craisins and added 1/2 tsp cinnamon. OMG! My eyes were rolling back in my head! Using real buttermilk is essential! My kids even ate them with lots of happy grunts of approval, even the picky 5 year old princess.

My Best Clam Chowder

Boneless Buffalo Wings

I doubled the breading portion. The double dip was perfect, but a triple dip would be divine! Next time I would cut my chicken pieces smaller.

Sweet and Sour Chicken (Restaurant style)

The chicken turned out so moist and tender. The sauce was AH-Mazing! Served over rice it has become a family favorite and leftovers don't last long!

To Die For Blueberry Muffins

I really gave this recipe a good go. I've made it several times hoping that the next time it would be "to die for". I'm giving up. The batter is WAY too thick. The topping falls off and burns to the pan which makes getting the muffins out extremely difficult. They burn. EVERY SINGLE TIME. Today I tried putting the topping on after they were done (which didn't work), they came out easier, but the sides and bottom still burned. I've lowered the temperature to 350 with the same results. I think it has to do with the thickness of the batter. Poorly done. The other high reviews must be after substantial alterations.

Spinach and Strawberry Salad

I added strips of grilled chicken and almond slivers. Overall EXCELLENT!!! I would recommend not putting on the dressing until just before serving.

Mom's Quick Pasta Sauce

I added only 2 packages of the soup mix when I tasted it YIKES!!!! I added about 4 more cans of tomato product trying to dilute all that salt. DISGUSTING!!!

Chicken Biryani

Mom's Chicken Cacciatore

Fabulous! I did change a few things. 3 cloves garlic. A can of Italian stewed tomatoes in addition to the diced tomatoes. 1 cup red wine instead of 1/2 cup white. The extra ingredients worked well to cover the chicken while cooking. The chicken turned out SO tender! It was falling off the bone. I really didn't think a half hour would actually cook it. It really needed salt to bring out the flavor, though. I recommend 1 tsp. salt and 1/4 tsp pepper. Next time I would only use 1 cup flour for a lighter coating.

Butternut Squash Soup

I used 1/2 of the cream cheese and added 1/4 tsp nutmeg. For my husband's sake I added 3 chicken breasts to cook with the squash. I took the chicken out before putting the soup in the blender and then added chunks of chicken to the blended finale. OH MY GOSH!!! It was FANTASTIC!!! I was licking the bowl! The nutmeg gave it a sweet Christmas-y taste and the cayenne peper gave it just the right kick.

Eggplant Parmesan II

I brought home the eggplant to make this dish and my husband's response was, "Are you mad at me?". I loved that the breaded eggplant was baked, not fried...very low fat! I thought the dish was FABULOUS! As for my husband? He went back for seconds, despite the initial protests.
