YUM! YUM! What an easy, tasty recipe!!! I will always do pork loin like this from now on. I am going to experiment with chicken. I changed the recipe by using only 2/3 cup water (as recommended by others), cajun seasoning instead of the salt and pepper alone, and one of those little tubs of garlic dipping sauce you get with pretzels. My GOSH it was good! Oh yeah, if you like onions (which I do) use 2 onions instead of one. Don't forget to add seasoning to your onions. They will cook down. Be sure to leave the lid off the last 20 minutes so that the water will actually evaporate as recommended by the other folks who have rated this recipe.
