No Bakes

Reviewed: Sep. 12, 2011
I've read all the no bake cookie recipes on this site and most of them are identical to the one I've had for almost 40 yrs. The only difference is the time you should boil the butter, sugar, cocoa and milk. I bring the cocoa mixture to a soft rolling boiling on medium high heat then I turn the heat down to medium and stir constantly for 2 minutes. A nice twist is to add almond extract instead of vanilla. For a glossy finish to the cookie only use real butter. These are my husbands favorite cookies than I've made them probably a thousand times and they have always turned out. I also use 5 T cocoa instead of the 3 or 4 the other recipes listed.

Chocolate Scotcheroos

Reviewed: Oct. 15, 2011
I love this recipe! I've been making this for more that 40 yrs. The only differences in my recipe is mine calls for 3/4 c white corn syrup and 2T butter and 1c sugar. 1 1/2 c peanut butter 6 c Special K. One package chocolate chips( 2 cups) and 1 c butterscotch chips. Directions are the same. These are always a huge hit!

Gourmet Pretzel Rods

Reviewed: Nov. 4, 2012
These are one of my favorite things to make during the holidays! One thing I do a bit differently is instead of using a tablespoon of water I use 2 tablespoons evaporated milk. I also use a 2 cup pyrex glass measuring cup, once the caramel is melted I pour what will fit in the measuring cup. It makes is really easy to dip the pretzels and less messy. I scrape the bottom of the pretzel on the spout of the measuring cup. Plus if the caramel starts to cool to much you can just pop it in the microwave. And, since I like to do these in batches, I just refrigerate any leftovers I have right in the measuring cup, it's easy to reheat and use another day. I use a variety of mini chocolate chips, white chocolate chips, mini M & M's, crushed health bars, pecans, butterscotch chips and any thing else I have in the house. I don't usually dip them again in chocolate, it's really not needed in my opinion.

Potato Salmon Patties

Reviewed: Mar. 28, 2012
Excellent, moist, delicious salmon patty! I followed the recipe as written with two exceptions. I didn't have any potato flakes or celery salt so I used ground celery seeds and sour cream and chive potato flakes. So good and so yummy! Way better than my Mom's recipe. Will be saving this to my recipe box to use again and again!

Blackberry Cobbler II

Reviewed: Aug. 31, 2011
I've made this twice once with blackberries and once with wild blueberries. Both were really good. I added cinnamon and extra lemon as suggested by other reviewers. As good as this was still warm from the over it was so much better the next day! Will definitely make again.

Hungarian Goulash I

Reviewed: Jul. 6, 2011
I've made this twice the first time using regular paprika ( didn't realize there were more than one type of paprika) it wasn't very good at all. The second time used hungarian sweet paprika and it was much better but still nothing I will make again. I followed the recipe as written and it looked good just didn't taste very good.

Dietetic Banana Nut Muffins

Reviewed: Apr. 7, 2012
I make these for my dad who is newly diagnosed as diabetic. He loves them! I make them for him when ever I visit and we freeze some so he can just take out 1 or 2 as he wants them without having to worry about "reading a label"

Pumpkin Bread IV

Reviewed: Nov. 19, 2011
Wonderful moist and dense bread. I did as others suggested using half oil and half unsweetened applesauce. It made 6 mini loaves and one regular size loaf. I sprinkled a sugar and cinnamon mixture on the bottom and top. It made for a sweet crunchy topping and I do this with a lot of my quick breads. Will definitely make again.

Creamy Chicken and Wild Rice Soup

Reviewed: Oct. 18, 2011
Oh my gosh! This is so so good and so so easy. I made this as written and it was to die for! With that being said the next time I make this, and there will be a next time, I will cut the butter back and use half and half or possibly milk instead of heavy cream. I think I could actually feel my arteries hardening!

Porcupine Meatballs

Reviewed: Sep. 17, 2011
I love these meatballs. This is the same recipe I have used for years. The only thing I do differently is I use 2-3 T worcestershire sauce. I have also used ground turkey for a higher protein lower fat version. Oh, and I use long grain rice not instant. Very good and tasty!

Jelly-Filled Muffins

Reviewed: Sep. 13, 2011
I love these muffins and so did my children when they were small and still living at home. I made these again just the other day and changed them around some just for fun. I used about 1 3/4 c sugar, 1/4 t cinnamon, skipped the jelly and nutmeg all together and used 2 c wild blue berries and about a 1 T lemon juice. I bake them in mini muffin tins at 400 for about 10 mins. Sprinkled sugar and cinnamon on top before baking. They were so good! It made 24 mini muffins and one small mini loaf.

Blueberry Zucchini Bread

Reviewed: Aug. 26, 2011
I made this for a house full of relatives and just about everyone asked for the recipe. I used fresh wild blueberries and zucchini from my garden and followed the recipe as written the first time and it was excellent. The second time I used a crumb topping as another reviewer suggested and used half white sugar and half brown sugar and it was even better!

Peanut Butter Sheet Cake

Reviewed: May 2, 2013
I followed the recipe as written. The cake itself was moist and yummy. The frosting was ok, but not really to my liking. It was way to sweet and had a funky texture. I made this for easter and just about everyone was scrapping the frosting off after the first few bites. I will make this cake again but will use a different frosting.
