Quick and Easy Brownies

I've made these several times now. Like others have suggested I decreased the flour to just 1 cup and decreased the eggs to just 3. These are excellent! I usually add about a half cut of chocolate chips to the batter before baking and frost them with a chocolate cream cheese frosting. YUMMO!!

Party Punch VI

I made this for a baby shower and used raspberry and pineapple sherbert. It was so delicious that I am going to make it again next week for my Dad's surprise 80th birthday party. I know it will be a hit.

Beef Stew VI

This was very good! After reading several reviews I added to this recipe a T A-1 sauce, T Worcestershire sauce and T Catsup. I used both bouillon cubes and beef broth. I will be making this again.

Peanut Butter Sheet Cake

I followed the recipe as written. The cake itself was moist and yummy. The frosting was ok, but not really to my liking. It was way to sweet and had a funky texture. I made this for easter and just about everyone was scrapping the frosting off after the first few bites. I will make this cake again but will use a different frosting.

Gourmet Pretzel Rods

These are one of my favorite things to make during the holidays! One thing I do a bit differently is instead of using a tablespoon of water I use 2 tablespoons evaporated milk. I also use a 2 cup pyrex glass measuring cup, once the caramel is melted I pour what will fit in the measuring cup. It makes is really easy to dip the pretzels and less messy. I scrape the bottom of the pretzel on the spout of the measuring cup. Plus if the caramel starts to cool to much you can just pop it in the microwave. And, since I like to do these in batches, I just refrigerate any leftovers I have right in the measuring cup, it's easy to reheat and use another day. I use a variety of mini chocolate chips, white chocolate chips, mini M & M's, crushed health bars, pecans, butterscotch chips and any thing else I have in the house. I don't usually dip them again in chocolate, it's really not needed in my opinion.

My Amish Friend's Caramel Corn

Oh My Gosh!! This is BETTER than some of the stuff I've purchased at caramel corn speciality stores!! Definitely use real butter instead of margarine. I will be making this again and again!!

Dietetic Banana Nut Muffins

I make these for my dad who is newly diagnosed as diabetic. He loves them! I make them for him when ever I visit and we freeze some so he can just take out 1 or 2 as he wants them without having to worry about "reading a label"

Potato Salmon Patties

Excellent, moist, delicious salmon patty! I followed the recipe as written with two exceptions. I didn't have any potato flakes or celery salt so I used ground celery seeds and sour cream and chive potato flakes. So good and so yummy! Way better than my Mom's recipe. Will be saving this to my recipe box to use again and again!

Wonderful!! I followed others suggestions and used a broiling pan and plenty of extra brown sugar. These were so so good! I'll definitely be making these again especially during the up coming holidays.

Pumpkin Bread IV

Wonderful moist and dense bread. I did as others suggested using half oil and half unsweetened applesauce. It made 6 mini loaves and one regular size loaf. I sprinkled a sugar and cinnamon mixture on the bottom and top. It made for a sweet crunchy topping and I do this with a lot of my quick breads. Will definitely make again.

Creamy Chicken and Wild Rice Soup

Oh my gosh! This is so so good and so so easy. I made this as written and it was to die for! With that being said the next time I make this, and there will be a next time, I will cut the butter back and use half and half or possibly milk instead of heavy cream. I think I could actually feel my arteries hardening!

Chocolate Scotcheroos

I love this recipe! I've been making this for more that 40 yrs. The only differences in my recipe is mine calls for 3/4 c white corn syrup and 2T butter and 1c sugar. 1 1/2 c peanut butter 6 c Special K. One package chocolate chips( 2 cups) and 1 c butterscotch chips. Directions are the same. These are always a huge hit!

Excellent moist banana bread as written. I double this recipe today as I had 6 very ripe banana's I wanted to use up. I made two loaves and 24 mini muffins. The only thing I added was I dusted the bottoms and tops with a sugar cinnamon mix.

Rich Italian Sausage and Potato Soup

One of my most favorite soups! I use chicken stock instead of bouillon. I also use real bacon bits instead of actually frying up bacon. And last I use the entire carton of heavy cream not just a 1/3 cup. Wonderful tasty soup!
