Orange Kiss-Me Cake

Beer Bread I

I tried this with some blueberry beer that I bought on accident (that will teach me to pay attention to labels), but it actually makes it taste of blueberries. And it was very good. I am thinking of making another batch with blueberries in it.

Sweet and Sour Greens

This was very yummy. My husband loved it and he can be pretty picky. I have been growing collard greens in my garden this year so we have tried quite a few recipes and my favorite are the ones that have a little sweet sour or bacon... this is the best of both worlds.

Connie's Zucchini "Crab" Cakes

I followed MANDT2 suggestion of oiling a baking sheet and baking them at 400 for 15 minutes on each side and they came out super yummy. Hubby and I ate them with diced tomatoes on top. My picky son liked them too an added bonus!

Coconut Poke Cake

I made this for mother's day and it was a huge hit with my extended family. I made my own whipped cream and I toasted the coconut to make it a little prettier, but changed nothing else. It was a beautiful cake. I will say though that I did have a hard time taking it out of the pans after it had been soaking in the coconut cream mixture, but as the whipped cream covered the small blemishes it was okay.

Pecan Breaded Chicken Breasts

I have made this twice now and the trick is too blend the four, pecans, and salt in a food processor. The pecans get coated perfectly in the flour and the nuts stay on the chicken much more than chopping the pecans and mixing them by had later. Otherwise the recipe is amazing and my entire family loves it

Sausage-Stuffed Squash

As far as my family is concerned this is our new favorite way to eat acorn squash. I did add a little apple to it per another reviewers suggestion, but I don't think it was needed. Thanks for sharing!

The Perfect Mai Tai

This was exactly what we were looking for. One thing that may help some (especially in the pocketbook area) is to make your own almond syrup. After striking out at several stores I I checked the ingredients in the vanilla syrup and then made my own. The vanilla syrups said that they only had vanilla extract, water and sugar... heck I can make that for a almond flavored syrup. I just doubled my batch that I made for my simple syrup and added almond extract. I made it kind of weak given the recipe, but the taste is the same, and it is way cheaper than a bottle of syrup.

Fresh Semolina and Egg Pasta

This was my first homemade pasta. Everyone greedily ate my pasta up with only a clam/butter/garlic sauce on it. It definitely is harder than regular pasta, but so worth the work.

Zippy Cucumber Salad

This was a great recipe. I was a little intimidated with the jalapeño so I used an anaheim pepper, but my husband who hates cucumbers loved this because of all the flavors that it has. Next time I am going to sear some tuna and serve this as the side.

This is best on the bbq but in a pinch you can put it in the oven and it is still good. We bake it at 400 for 10-15 minutes depending on the size and thickness.
