Chunky Rhubarb Applesauce

This was a really simple recipe that my whole family enjoyed. I do agree with the other reviews that suggested decreasing the cooking time by half. I just cooked it until the apples were fork tender. The rhubarb was well past tender by then.

Roasted Beet Wedges

Personally beets are not my thing, but given that my 3 and 5 year old actually ate their beets I thought it was worthy of the 4 stars. I did add one thing. I sprinkled some feta cheese on top after the beets were out of the oven. I thought that the saltiness of the cheese really made them taste better, although they were fine without it.

Sausage-Stuffed Squash

As far as my family is concerned this is our new favorite way to eat acorn squash. I did add a little apple to it per another reviewers suggestion, but I don't think it was needed. Thanks for sharing!

Che Guevara's Ceviche

This was a great recipe. I used some Ono that I was trying to find a good recipe for and this was definitely a hit. I did use canned diced tomatoes, and didn't use the celery(not a celery lover) but it still came out great!

Beer Bread I

I tried this with some blueberry beer that I bought on accident (that will teach me to pay attention to labels), but it actually makes it taste of blueberries. And it was very good. I am thinking of making another batch with blueberries in it.

Cinnamon Rice with Apples

This was a pretty good recipe but I found that I had to add water to my rice in order to make my rice cook fully. Additionally I did think it was just a little too sweet. I will likely make it again with pork chops, but will reduce the apple juice.

Honey Coconut Salmon

There is way too much butter in this recipe. You could easily cut the ingredients by half (except the coconut, that is the best part!) and have plenty for your recipe. I'm giving it 3 stars because only half of my family liked it.

Sweet Potato and Apple Casserole

This was a great recipe. The only difference that I had was that I baked my sweet potatoes skins on in the oven at 400 until they were soft, then peeled and cut them. I used a granny smith apple (all that I had in the house) and I think a sweeter apple would have been better. Everyone in the family loved it though. Thanks for sharing.

Coconut Poke Cake

I made this for mother's day and it was a huge hit with my extended family. I made my own whipped cream and I toasted the coconut to make it a little prettier, but changed nothing else. It was a beautiful cake. I will say though that I did have a hard time taking it out of the pans after it had been soaking in the coconut cream mixture, but as the whipped cream covered the small blemishes it was okay.

Zippy Cucumber Salad

This was a great recipe. I was a little intimidated with the jalapeño so I used an anaheim pepper, but my husband who hates cucumbers loved this because of all the flavors that it has. Next time I am going to sear some tuna and serve this as the side.

Fresh Semolina and Egg Pasta

This was my first homemade pasta. Everyone greedily ate my pasta up with only a clam/butter/garlic sauce on it. It definitely is harder than regular pasta, but so worth the work.

The Perfect Mai Tai

This was exactly what we were looking for. One thing that may help some (especially in the pocketbook area) is to make your own almond syrup. After striking out at several stores I I checked the ingredients in the vanilla syrup and then made my own. The vanilla syrups said that they only had vanilla extract, water and sugar... heck I can make that for a almond flavored syrup. I just doubled my batch that I made for my simple syrup and added almond extract. I made it kind of weak given the recipe, but the taste is the same, and it is way cheaper than a bottle of syrup.

Sweet and Tangy Sauteed Collard Greens

My husband and I both like the recipe especially the dressing, but I will say that I don't think I cooked the greens enough as they were still hard to chew (be warned). I also used about 1/2 the butter, just because of the fat involved.
