Pasta Shells Florentine

This recipe is super-tasty straight out of the oven, and healthy too! My only qualm is that the next day, reheated, they tasted a little bit bitter. Cold, they were fine! Go figure!

Falafel I

The flavour of these falafel was different than any falafel I've had, but very, very good. I love the spiciness of them! Based on other people's comments of being too runny, I tried mashing the chickpeas like other recipes suggest, hoping they would be thicker and stick together better. I still had no luck :o( A few of them kind of stayed together, and the rest just ended up as tiny scattered fried pieces. They still worked in a pita, but were not balls by any means!!! The difficulty in preparation is the only reason I gave this recipe 3 stars; otherwise, it was very good. ( I did leave out the cilantro!)

Chocolate Oatmeal Cookies

What can I say? I couldn't keep my fingers out of this dough!! I used reduced-fat butter and substitued unsweetened applesauce for half of it - I couldn't tell at ALL. Scrumptious! Keep an eye out when they're in the oven though, I couldn't tell whether they were "brown" or not so I just took them out after 10 minutes, they didn't look done, but they were.

Chicago Dip

To this recipe I added a bit more seasoning salt, and a can of chopped water chestnuts. I also used low-fat miracle whip instead of real mayo, which is probably why it was pretty strong and tangy. I would recommend using reduced-fat mayonnaise instead!! However, it was still good, albeit a bit runny for my tastes. Pumpernickel bread was awesome with this. I reduced the onions to about half a cup, which was just right. (I do have strong tastes though!)

Imitation Meatloaf

I had no thyme for this recipe, so, in a panick, substituted some basil and oregano instead, which I'm sure influenced the flavour! I also used a bit more sauce than was specified, and spread some sauce and ketchup mix on the top. It turned out a little bland but was good with salt and pepper. VERY FILLING, may I add. I grated mozzarella on half the top and parmesan on the other- both were excellent! Sidenote: lentils do not mash very well when they're cold!!! Good recipe though!

Mini Frittatas

I think I used too much spinach in this one (had to estimate with fresh!) but despite the lumpy texture, they turned out great! I had no lemon pepper but grated a bit of lemon rind into the mix and forgot to add mustard but they were still scrumptious!

Pumpkin Oatmeal

I ran out of milk and used vanilla yogurt and it was still awesome..I also used a bit of brown sugar on the top. It was a VERY filling breakfast, and fast too!

Basic Baked Spaghetti

This is great basic recipe, but I really prefer things a bit spicier. Use a flavourful tomato sauce or I spiced mine up with red pepper flakes, basil and a pre-mixed spicy flavouring shaker. Parmesan on top was also a treat! I substituted 1.5 cups dry TVP (So Soya) for the ground beef; this worked well!

Soft Zucchini Spice Cookies

I have made these cookies several times and they are EXCELLENT with chocolate chips. I also substituted half the butter with applesauce once and it seemed to make no difference. Very moist, almost cakelike in texture. Zucchini-haters devoured these!

Pumpkin Spice Muffins

These muffins are yummy...I ran out of pumpkin and used more applesauce and they still worked!! Would be a bit more interesting with cream cheese or cinnamon sugar on top though.

Easy Fusili with Tomato Pesto Sauce

Excellent recipe... I used garlic-flavoured tomatoes and it was still a tad bland. Would be good with fresh basil, maybe feta cheese for more flavour. Tastes like a decadent restaurant meal!

Vegetarian Moussaka

THis is an amazing recipe! I prefer to omit the feta between layers and just put it on top...you can taste it better that way! I also add more potatoes, zucchini and lentils to fill up the 9x13 pan a bit better. I also grill the vegetables to avoid the use of oil. Smells delcious while cooking!
