Salmon With Green Fettuccine

This was great! It could use a little more flavor, I think next time I'll add some garlic and chili pepper flakes with the onions. We made the sauce and served it over plain fettucini and steamed brocolli. This was a creative and easy way to use a can of salmon!

San Francisco Sourdough Bread

I used my bread machine to mix and knead this dough and it came out wonderful! It was enough to make one loaf and four smallish bread-bowl sized loaves. I did not use the egg wash or the onion, but I did put a ramekin of water in the oven with the bread. This is a keeper!

Chorizo and Lentil Stew

This is a great recipe! I took other reviewers advice and added a teaspoon each of garam masala and coriander, 1 onion, 2 medium potatoes and I used 3 cups of chicken broth and 1 cup water. I only had a half pound of chorizo on hand and it turned out fine with that. I think next time I will stick to only 3 cups of liquid, I'd like it to be more stew-ish. Served over rice it is wonderful! This is definitely going into the rotation, I may try it with chicken next time.

Honey Wheat Sandwich Rolls

These are so good! They have more of a dinner roll sweetness to them, but I have used them for sandwiches and burgers with no complaints. I will definitely be trying this recipe as a loaf, per another reviewer.

Spanish Rice II

I made this as directed but used brown rice and 1 1/2 cups water, and it came out great! I didn't have any broth on hand, but I'll try that next time, it can only get better!

Layered Chicken and Black Bean Enchilada Casserole

This is a great recipe! It's super easy especially if you pre-cook your chicken. I cooked a chopped onion with the chicken, and mixed half of the chicken/bean mixture with the sour cream and half of the cheese instead of trying to spread them all in the pan separately. I didn't put any sour cream on the top layer, just served it on the side with the meal. I used all cheddar cheese and it turned out great! I also took another reviewer's advice and toasted the tortillas in the oven at 400 for about 3 minutes a side. Will definitely be making this again and again!

Refried Beans Without the Refry

I have made these about 1000 times, it is a great recipe! I usually cut the salt by about half. It is so easy to portion it out and put some in the freezer for an easy weeknight meal!
