Surimi, Spinach, and Roasted Red Pepper Quiche

Absolutely wonderful, simple recipe and dish that was appreciated by everyone at a dinner potluck. I used minced ham instead of crab and omitted parmesan - it was still delicious! I cooked it for about 35 minutes and then let it sit in the oven for an additional 30. Perfect!

Creamy Baked Chicken

It was only okay. There simply was not very much flavor, even using some of the other reviewers' suggestions with chicken broth. Could be used as a good base recipe, but nothing I'll try again anytime soon.

Black Pepper Beef and Cabbage Stir Fry

This was definitely good, but not wonderful. Certainly easy, with very simple ingredients, but it lacked some flavor that I just can't quite identify. Husband suggested ginger could improve it, but I don't think that alone would elevate this recipe from okay/good to super/delicious. I'll probably experiment with it again, because of its simplicity, but it wasn't what I'd hoped.

Grecian Pork Tenderloin

Simple and delicious! Prepared as directed, but cooked in the oven for 20 minutes at 400, then removed from oven and tented with foil on counter for another 10 minutes. Perfect! A wonderful mid-winter's meal, with fresh citrus and garlic taste, with salad and saffron rice on the side.

Slow Cooker Marmalade Curry Chicken

I made this, halving the recipe, with the addition of (lite) coconut milk in the last hour of cooking as others recommended. I had already increased the quantity of both the ginger and the curry powder, and it was still lacking somewhat in flavor. Served with oven roasted carrots, red peppers, onions, over brown rice. Additional salt improved the taste, but overall, we didn't love this dish, despite its simplicity.

Beef Stroganoff III

A very simple, delicious stroganoff! Added onion and mushroom soup mix to simmering beef (chuck roast) and broth, plus 1/4 cup red wine. Found the sauce thickened more than I liked and I needed to add water (and more salt and pepper) toward the end of cooking. Otherwise, flavor was magnificent! Served mixed with egg noodles.

Slow Cooker Roast Beef

Excellent recipe! Definitely be sure you know the power and cooking capability of your slow-cooker, however. I left mine in for 7 hours, and it was very tender, falling apart on the fork, but still just a bit overdone and dry inside. Will probably be fine at 5.5 hours the next time I make it. I added a dash of Zinfandel wine and used low sodium soy sauce. DELICIOUS!

Easy Chicken Posole

So simple, yet so flavorful and filling! I accidentally bought golden hominy, but the taste didn't seem to suffer, and I didn't use chili powder. Added lime juice and half a can of Mexican Rotel to the cooking broth, simmered as directed, and garnished our bowls with shredded lettuce, chopped cilantro, and lime. It was amazing! We're even thinking of making a huge batch and throwing a Posole Dinner Party for the start of winter!

Scalloped Pork Chop Combo

A delicious combination that was simple to prepare. I followed the recipe exactly, aside from cooking our green beans on the side. The box mix of scalloped potatoes I used required a longer cooking time than the recipe called for, so I had to adjust accordingly. We all enjoyed it - even my 3-year-old!

Ground Beef Curly Noodle

I found this recipe when doing an ingredient search for what I thought would be an impossible combination of items. As it turns out, this was not only delicious, but easy, and incredibly budget-friendly! Our 3 year-old loved it. My husband and I both had seconds. It's a great, simple dish, perfect for a fast supper. I followed the recipe exactly except for salting generously after the tomatoes were added. Thanks for a quick, delicious meal!

Busy-Day Dinner

Simple, delicious, and very satisfying! I believe the key to making this recipe flavorful and delicious is to be sure to salt and pepper generously, to taste, while simmering. I omitted the tomato sauce, used ground turkey, a yellow pepper, and added just enough cumin to flavor, rather than the chili powder, and I made cornbread to accompany it. With a sweetness and tang, this 'stew' was fresh enough to serve on a very hot summer's day. I highly recommend this recipe and will absolutely be making it again!

Sweet 'N' Sour Turkey

This was the perfect solution for leftover chicken and some veggies! Following others' advice, I made only half the sauce and found this was plenty - the perfect consistency for a flavorful, saucy stir-fry! I used shallots, celery, carrot, red and orange pepper, garlic, and pineapple. Really this dish was a wonderful surprise - even my almost-3-year old daughter ate a large helping! To anyone being spooked by other reviews: it's NOT an average chicken and veggies with rice skillet recipe, it IS a stir fry - and definitely worth trying!

Baked Lemon Chicken with Mushroom Sauce

Delicious and nearly foolproof! Added garlic when I sautéd the mushrooms, and I was sure to salt and pepper the chicken breasts thoroughly before baking. I used half chicken broth and half Cream of Chicken soup for the sauce (rather than add flour). Served over wide egg noodles, this was an amazingly simple, flavorful meal!

Coq au Vin alla Italiana

I must admit I left out the Italian sausage, but otherwise followed this recipe to the letter. The flavors melded perfectly, and I found the preparation to be very simple. I chose to serve this with cornbread stuffing, as we aren't potato people. Would be simple to increase for a large winter's meal for company.
