Whole Wheat Beer Bread

Reviewed: Jan. 2, 2012
I always loved beer bread and haven't had it for years. I followed the recipe, watched the time carefully and used fresh ingredients (incl. bottled Budweiser). Altho' moist to the touch the bread seems dry in the mouth, difficult to swallow and doesn't have the rich beer flavor I recall from the white version of the past. I'm SO disappointed and don't know why it's so lacking.

Brazilian Fish Stew

Reviewed: Jan. 2, 2011
I'm stumped as to what to serve with this as I go on a no starchy carb diet (so NO RICE). Suggestions? I haven't made it yet but have to give it stars

Brown Sugar Smokies

Reviewed: Dec. 30, 2010
I'm reviewing these great smokies because although I didn't make them I sure ate them! (My friend made them and I had to get the recipe). I always avoid the wiener type appetizers but tried these and loved them. In particular, I liked the crispy texture which I think makes them special. The sausages carried the flavor all by themselves and the sauce detracted from them, in my opinion.

Taco Seasoning I

A great option for expats and missionaries who can't purchase the packages!

Slow Cooker Chai

Reviewed: Dec. 5, 2010
I used A LOT of spices and will keep this spiced water as a base to make tea. I'm freezing some of it and putting the rest in the refrig. When I'm ready for my chai I can prepare 1 cup at a time. I heat it up, add the tea bag as usual. After steeping I add milk and perhaps sugar. Actually tastes much like the chai tea bags I purchase but this is much healthier! (I forgot the ginger and will add it next time!)

Chipotle Chicken Soup

Reviewed: Dec. 5, 2010
Adobo sauce gives this a great flavor and it's spicy. I added lime juice to match similar soups I've eaten in Mexico. Soup is ready in minutes! I used 2 boneless chick. breasts. My modification: used chicken broth, lots of garlic, skipped corn and beans (didn't have) and sugar; added zucchini, bit of salt and juice of 1-2 limes. Ready in minutes. Will serve with Mexican white cheese (queso fresco) and tortilla strips (soup is similar to some tortilla soups I had in Mexico) Note: it calls for the sauce from the can of the adobo with chili, not the chili and that alone is spicy. You can add chile but cautiously!

Marrakesh Vegetable Curry

Reviewed: Nov. 23, 2010
Wow, this has flavor! I probably ended up with more veggies than the recipe intended so I added another 1/2 portion of the spice mixture. I used an expensive curry and it added just the right amount of heat. The orange juice is an important part of this so don't skip it! I overcooked it while trying to insure that the harder veggies were softened. It didn't matter, it's so good!

Lebanese Chicken and Potatoes

Reviewed: Nov. 13, 2010
Baked a small portion of it before guests arrived and make it exactly like the recipe states but it was so bland. My son said the potatoes were weird (strong lemon flavor). I quickly made 2 major adjustments to the remaining uncooked portion. I covered the entire dish with Greek Seasoning (Spice Hunter) and poured off the lemon-oil-garlic liquid that the chicken marinated in for several hours. The seasoning gave it exactly what it needed and the marinade had done it's job. Light lemon-garlic taste with herbs--It was great! Tried to make a customized recipe but only get a pop up for payment.

African Chicken Stew

Reviewed: Oct. 18, 2010
I qualify my review by stating that I LOVE Thai and Indian food so I think this recipe is great for a very flavorful and different meal. I'm wondering what type of GREEN vegetable I could add that would enhance it while making it a complete meal. FYI I thought I had coriander but didn't and it's great anyway!

Braised Balsamic Chicken

Reviewed: Sep. 20, 2010
The balsalmic vinegar came through well but it just wasn't that interesting to me. It seemed that it was about all I tasted. I had reduced the BV to 1/4 c but it wasn't enough so went back to the 1/2 c.

Sweet Chipotle Grilling Sauce

Reviewed: Sep. 18, 2010
Just made this sauce and wow, it's great (smoky, sweet and spicy). But now I don't know how to use it, other than to brush it on chicken or pork and barbecue. It has so much more potential! Such information would be helpful in the recipe. BTW sugar free syrup seems to be just fine; can't tell.

Lentil Quiche

Reviewed: Sep. 18, 2010
I found this dish tasty enough but not striking in flavor. I thought is was common place in its Italian flavor. I added some mozzarella to my serving to give it a little boost and it desperately needed some salt. I doubt that I'll make it again because I think it's rather boring. That's too bad because it's very healthy and I feel like I'm doing something good for my body when I eat such a dish.
