Stroganoff

Reviewed: Nov. 4, 2004
I was convinced my kids would take one look at this and refuse to eat it, but they actually liked it. I had a bigger soup-to-beef ratio, and I added a little red wine and black pepper. I served it over radiatore (because that's my youngest picked at the store). I also omitted the flour and cut the time more than in half. I don't like investing a lot of time into recipes when it's just the kids and me, in case they don't like it, but this wass both easy and tasty.

Beefy Mushroom Barley Soup

Reviewed: Oct. 22, 2004
This was deeelicious! I doubled the barley, added fresh thyme while sauteeing the veggies, and about 1/2 cup of red wine near the end. I skipped the sour cream (didn't have any). The kids would only eat the beef out of it, but whatever, they think boxed mac-n-cheese is haute cuisine. It's a good, hearty soup.

Butternut Squash with Onions and Pecans

Reviewed: Oct. 19, 2004
The squash cooked unevenly (yes, I stirred it), and the whole dish was rather disappointing. Maybe it was the particular squash, I don't know, but I think I'll go back to the usual baked squash.

Really GOOD Frosting!!!

Reviewed: Oct. 16, 2004
Very easy and tasty, but thicker than I expected and set a little faster that I would've liked. Rapidly stackable, tho.

Sugar Cookie Cutouts

Reviewed: Oct. 16, 2004
Very easy to handle, even for my 5 yr old. Could've been a tad sweeter, tho, so they aren't absolutely perfect, but still, the easiest dough ever, so I'll probably make them again, with a little more sugar.

Cuban Shredded Pork

Reviewed: Oct. 14, 2004
I was not impressed, and neither was my family. The pork was dry, even though I took the advice of other reviewers to add more oil and lime juice at the frying stage. I also found it rather bland. I wouldn't make this again, tho I'm sure there are some tricks that might make it more interesting.

Simple Beef Flavored Gravy

Reviewed: Oct. 14, 2004
Quite good, as long as you do the onions, butter, and flour first and then add the other ingredients. I also added a little meat juice from the meatloaf I made, and it came out yummy!

Scottish Oat Scones

Reviewed: Oct. 14, 2004
These were fantastic! Really oaty- tasting, not too sweet, and easy to make. I pressed some oats on the tops to make them look pretty. I may try raisins next time. Amazingly, they were even good after 2 days (in air-tight storage), especially warmed up in the microwave with butter and honey. My kids loved them, too, which is surprising, considering they aren't that sweet. One of the kids has an aversion to currants, tho, and picked them all out.

Hearty Beef Stew

Reviewed: Oct. 14, 2004
Pretty good. I added 1 1/2 cups of beef broth, and a coupe sprigs of fresh rosemary. Next time I will mince it, as the rosemary fell apart in the stew and my son didn't like the needles (can't blame him). My older son & I (who really liked the stew) agreed that it needed more carrots and less paprika. Overall, we liked it; the meat was tender and the gravy rich. My younger son, the ultra-picky one, wouldn't even touch it, but that's not unusual :)

Best Ever Meatloaf with Brown Gravy

Reviewed: Oct. 6, 2004
I was nervous about making meatloaf, because the one I had made years ago was awful. But, I cannot resist a challenge. Your recipe was awesome! We had to stop eating it so we wouldn't explode. The kids, altho they said they didn't 'really' like it, they ate the whole serving w/o complaint (rare in our house). In deference to the kids, I used mostly ketchup and a bit of worchestershire instead of chili sauce. I also added a tbs dried minced onion, a tsp of marjoram, and a dash each of allspice and cayenne (trust me). I also used a roux-based gravy, no mushrooms - the kids hate mushrooms. It was fantastic. My husband is still raving about it as I write this. Thanks!

Swordfish Calabrian Style

I saw this in my recipe book after forgetting about it for 2 years, and I remembered how much I liked it. I don't remember any rubbery fish problem. I can't wait to make it again!

Ginger Glazed Mahi Mahi

Reviewed: Oct. 6, 2004
Really good. Even my 7-yr-old, who is just getting 'adventurous' food-wise, raved about it. I'll definitely make this again, because it works great with the individually-frozen fillets I buy.

Spice Cookies

Pretty yummy, if a little bland. I sprinkled the tops of the cookies with turbinado sugar before I baked them, and that sweetened them up a bit. Very cakelike texture.

Caramel Apple Pork Chops

The chops were a little dry, and I would've doubled the sauce had I read first. Otherwise, quite tasty.

Scalloped Sweet Potatoes and Apples

Reviewed: Oct. 6, 2004
I thought this was easy & delicious. I thought the mace was perfect, but I think I'll use different apples next time, as the grannies I used were a little TOO tart, and didn't get as soft as I would've liked. My 7-yr-old loved the potatos, but not the apples so much.

Ground Beef Curly Noodle

I don't know what everyone's raving about. It wasn't completely inedible, but it wasn't very good, either. My kids took one look at it and refused to eat it.

Cinnamon Snack Mix

Reviewed: Dec. 25, 2001
The teddy grahams and graham cereal burned. I would stir the stuff around halfway thru baking. I also used regular raisins, because I always thought golden raisins were gross when I was a kid! Plus, I was a little confused that there was no cinnamon in the recipe...I figured it was an omission and added some.
