Rice Balls a la Tim
The balls are very tasty. I added a few extra things to the recipe. I sauteed about 1 cup of mushrooms and mixed them in with the rice and beef. Also I added some spices to the tomato sauce. Not sure my balls didn't want to get all that golden and crispy in the oven, but they still tasted delicious!!!

Chicken Cordon Bleu I
I didn't have ham or swiss cheese so I used deli hickory turkey slices and pepper jack cheese. Also I coated the chicken in breadcrumbs instead of just sprinkling them on top. Everyone loved it!

Quick and Easy Green Chile Chicken Enchilada Casserole
made it for my fiance tonight. He loved it!!! I made some changes suggested by others. I coated the tortillas instead of charring it. Also I used chicken thighs and cooked them with salsa in a slow cooker. I'm very full from eating two helpings of the casserole tonight, but I can't wait to eat it the leftovers for lunch tomorrow! :)
